PB&J Quesadillas

April 29, 2019 by Nicole Collins Today, we're celebrating the return of peanut butter! So, I told you guys that I was giving up peanut butter for Lent, and boy was it a LONNNNNNG six weeks! I LOVE peanut butter a lot more than anyone should. I always have. Even growing up, I didn't want a peanut butter and jelly sandwich. I just wanted a peanut butter sammie. There are many many days when I grab a spoon, carve out a huge scoop of peanut butter straight from the jar, and lick it like a big ol' peanut butter lollipop. I even have a spoon that says “my peanut butter spoon”. At work, I keep a jar of peanut butter at my desk. Actually, a couple of the girls do. It's such a great stress snack, bor

Old Bay Honey Garlic Salmon with Green Beans

April 27, 2019 by Nicole Collins The creative process is a funny thing, isn't it? The way I dream up recipes is a totally random process. Sometimes, I read or see an item on a menu and think of ways to recreate it at home. Sometimes, I literally dream about what ingredients would go together to make a delicious dish. And, sometimes I work totally backwards and somehow end up with something amazing. Such is the case with today's recipe! I'm sure I've told you before, but I LOVE grocery shopping. But, I almost never go to a grocery store without a shopping list. I can't be trusted to be let loose in a store full of delicious ingredients with no guidance. But, for whatever reason, when I have p

Crabby Patties

April 23, 2019 by Nicole Collins Oooooh….who lives in a pineapple under the sea? SPONGEBOB SQUAREPANTS! Be honest, who just sang that in the theme song voice? Don’t lie. I know you did. How could you not? So, here’s what I find funny about cult favorite TV shows and movies. They’re so iconic that everyone knows the phrases, slang, or characters that these shows are known for whether they watch them or not. I don’t know if it’s because so many people in the world utter these catchphrases on repeat to the point that you can’t help but absorb them, or what it is. But, I definitely know a lot about shows that I’ve never even watched. For example, I’ve never really been a cartoon watcher. I don’t

Avocado Ranch Dip

April 20, 2019 by Nicole Collins Is it possible to love something too much? I definitely had this moment the other day where I had to ask myself how many times in one day it was acceptable to eat taco meat. I'll put just about anything in a taco. But, there is just something that's like none other when it comes to ground meat seasoned in one of those "off the shelf" packets of taco seasoning. I go for ground turkey these days, and it's even better than ground beef in my opinion. We used to have this employee store at work that was attached right to the manufacturing plant. So, we'd get stuff straight off the line that maybe had damaged packaging or maybe had an upcoming expiration date. When

Old Bay Caramel Sauce

April 18, 2019 by Nicole Collins Guys, I’ve been the definition of slacker this week. Well, not really. I’m not slacking on purpose. I’ve been EXTREMELY busy in all aspects of life with a thousand and one things happening. So, by the time I find myself with one little free second, I just don’t have the energy to sit down and type up my blog homework. But, I do have a TON of great recipes tested and ready to go. I just need to type them up. Please forgive me! You know that saying “the Lord works in mysterious ways”? Sometimes, it’s incredible how true that really is. It doesn’t have to be a grand gesture to see the markings of the Lord’s work. That’s for sure. It’s much more fun to find him i

April 12, 2019 by Nicole Collins To infinity, and beyond! OMG, who’s excited about Toy Story 4 coming out this summer? I can’t stop watching the trailer for the movie. I’m SO excited! Between that, The Lion King, and Aladdin; it's gonna be a good year! I remember when this move was first announced 4 or 5 years ago. And, then about 2 years ago is when I think we got the summer 2019 release date. That seemed sooooooo far away at the time. But, now we’re almost there. We’re in the home stretch! A couple of weekends ago, the bestie had a birthday party for her youngest. It was his first birthday, and her theme was “first trip around the sun”. How cute is that? We have this tradition of going all

Chesapeake Shrimp Toast

April 8, 2019 by Nicole Collins Question…where do you guys get your best ideas? Is it in the bathroom? Is it in your car? Is it in your dreams? For me, it’s in the shower. Here’s the thing though, my memory is not as reliable as it used to be. Quite frankly, it’s awful. I forget things as quickly as I think of them. And, I’m not known for being the fastest shower taker. Who am I kidding? That was too politely put. Truthfully, I take really long showers. I always have. But, I take care of a lot of business in there like putting on full concerts and daydreaming up million dollar ideas! So that combined with the long thick head of hair that I have to wash, 30 minute showers are really pretty co

Crunchberry French Toast

April 6, 2019 by Nicole Collins Cereal…not just for milk anymore. In fact, if I’m being honest, I eat more cereal outside of milk than in it. Is that strange? I love cereal in dry applications: in a snack mix, as a breading for chicken, or sometimes even just as a handful straight from the box. Not so much in milk though. Overall, cereal is one of those things that’s a one and done for me. Every once in a blue moon, I get a craving for cereal. I’ll buy a box, eat a bowl or two, then the box sits on top of my fridge for 2 years before I finally decide to throw it away. I don’t think I’ve ever finished an entire box of cereal. Even as a kid, I wasn’t much of a cereal eater. Maybe it’s the milk

Southwestern Guacamole

April 2, 2019 by Nicole Collins Ooo La Taco… I promise this will make sense in a few minutes. Though, my brain is kind of in squirrel mode this morning, and I feel 100 different tangents coming. Me = Trying to focus… Ok, ok. So, have you guys ever had a song that you will always and forever associate with a particular thing? It could be something personal like a person, a moment, a place. Or, it could be broader…like when you hear the Rembrandts song, you’ll always and forever think of Friends. Whatever it is, hearing the song just immediately puts this “thing” in your mind. Music is a really important part of my life (not from a talent perspective, but from a feeling perspective), so I have
