August 31, 2019 by Nicole Collins Why is tomorrow September? And, why are so many people out there acting like they're excited that fall is coming. I just don’t get it!
It really hurts my feelings that this weekend essentially marks the last weekend of summer. Kids are going back to school. Pools will be starting to close. People are having their “end of summer” barbecues. It’s so depressing! This last week before Labor Day also marks a big event in Maryland that pretty much is the last shebang of the summer...the Maryland State Fair. In all honesty, I haven’t been on a fair ride in probably 15 or 20 years. Now that I’m a grown-up and I have a little bit of logic, there is absolutely no wa
August 26, 2019 by Nicole Collins I've had the strangest cravings this summer. I get some pretty intense cravings on the regular, but this summer in particular has been a weird one for me. For starters, I've actually found myself (on more than one occasion) craving hot dogs. Now, that may sound like no big deal, because hot dogs are a summer staple. But for me, until this summer, I hadn't touched a hot dog in at least 20 years. Growing up, I use to live on bologna sandwiches and hot dogs with beans. But, I reached point somewhere around high school where I decided hot dogs were disgusting. And, I didn't go anywhere near them, until this summer. Even worse, I've been craving hot dogs with mus
August 24, 2019 by Nicole Collins I had a dream. No seriously, I had a dream. About today's recipe! I've told you before that recipe inspiration hits me in the oddest places sometimes. And when it hits me, I have to write the idea down asap before it's gone. That's why I keep a waterproof notepad in the shower. Most of the time, I end up texting the idea to myself. I've got a whole LONNNNNNGGGGGGG conversation going with myself about recipe ideas, how to fix recipe fails, how to change original ideas, etc. I'd love to say that my mind is a steel trap. And, once upon a time, it used to be. But these days, ideas are gone from my mind as quick as they got there. So when I woke up out a dream at
August 20, 2019 by Nicole Collins There is nothing like a good sandwich. And boy, are we making a GOOOOOD sandwich today! I used to survive off of sandwiches alone. Breakfast, lunch, and dinner...I was eating a sandwich. From your basic grilled cheese to a loaded double decker, sandwiches had always been my number one go to. But, when I started my healthy living journey, sandwiches were one of the first things to go. With the 21 Day Fix plan, 1 slice of bread equals one of your carbs for the day. And when you only get 4 carbs for a whole day (and only 2 by the time I reached my last few rounds of the plan), you really have to choose your carbs wisely. So sadly, sandwiches had to get the axe.
August 16, 2019 by Nicole Collins I'm thinking today about the good ol' days when I was young and dumb. Don't be silly. I'm not about to air out all of my dirty laundry! I like to give you those embarrassing stories in little tidbits. I'm talking about the days when I thought that sweet, savory, and spicy couldn't mix! Haha...sorry to disappoint. I used to be so simple with my food. Before the days of fruit in salads. Before the days of chocolate on potato chips. I still remember the moment that sweet and spicy first mixed for me when I tried strawberry jalapeno jam. One of my old employees had parents that loved to can. And, their favorite recipe to make was strawberry jalapeno jam. So, she
August 12, 2019 by Nicole Collins Believe it or not, I'm not much of a cake eater. You guys would probably never believe that though, since I keep throwing cake recipes at you like this Mug Cake and like today's recipe. But, every now and then I get a craving for cake. I guess since it's not something I usually want, when the craving hits, it's relentless. About a year ago, I discovered this company called Don't Forget Cakes that makes cake in a jar. What I thought was interesting about this particular brand is that the jars can be stored in the fridge and the freezer, making them shelf stable to keep on hand for weeks to months. Most people know that you can freeze cake but that frosting do
August 8, 2019 by Nicole Collins Anything you can do, I can do better. I can do anything better than you! Ok, so that's absolutely not true. But, I didn't write the song! However, it is true when it comes to how we got to today's recipe. I've actually been sitting on this recipe for a hot minute. I got the idea a couple of months ago watching a Gordon Ramsey show. Have you guys seen his newer show, 24 Hours to Hell and Back? It's basically Kitchen Nightmares with a different name. He has his team do recon for a few weeks prior to his arrival, he shows up in disguise, then he has 24 hours to revamp a failing restaurant. Of course, he's got to try the food before he reveals himself. And I reme
August 4, 2019 by Nicole Collins Why is bread so amazing? Crusty on the outside. Fluffy on the inside. Tastes delectable with anything, and I mean ANYTHING, that you could possibly want to pair with it. I mean, it’s really not fair. I can’t say I’ve ever met a bread that I didn’t like. If only deliciously carby bread didn't stick to my tummy/butt like glue. I was watching MasterChef the other day, and the mystery box challenge was a bread challenge. The contestants had a sourdough boule in front of them that they had to turn into 2 MasterChef worthy dishes. There were a lot of different interpretations on how to make the bread star of the dish. There were a lot of soups in bread bowls. There
August 1, 2019 by Nicole Collins I went through a lot to get today’s recipe together for you guys! Ok, so I’m being a touch dramatic. (Shocker!) The problem I encountered with today’s recipe was self-inflicted and has absolutely nothing to do with the food itself. So really, I’m whining about nothing. (Shocker, again!) Ok, let me explain…sometimes, I get this vision in my head long before I’ve ever made a recipe of how I want the photo shoot to go. I can see exactly how the pictures should look in my head. And it almost becomes obsessive for me, because things need to be the same way in real life that they are in my head. For this recipe, I only saw these pictures in glass banana split boats
