Loaded Potato Skins

March 30, 2020 by Nicole Collins Isn’t it funny how some things will always taste better when you eat them at a restaurant than they do at home? I’m not talking about the uber fancy menu items like a wagyu steak or anything here, folks. I’m talking about the simple things…like mayonnaise. I’ve had this conversation twice in the past week, but there is something about deli and restaurant mayo that’s different than what you get in the store. Now, I love mayonnaise. Probably a lot more than any person that wants to keep their arteries clean should. And trust me, I’ve tried all of the brands. But restaurant mayo is different! I think ranch dressing falls on this list too. Again, I’ve tried all o

Turkey Club Pizza

March 28, 2020 by Nicole Collins Some recipes are just classic. Don’t you agree? When I say classic, I mean everyone’s version of the same dish is relatively similar. There are SOOOOO many ingredients in this world and SOOOOO many opportunities to tweak the flavor of a dish by using a little of this or a little of that. But, the classic recipes that I’m talking about pretty much taste the same wherever you go. I’m thinking mostly of party foods when I make this statement. So, what would I put on that list? Hmmm… Maybe taco or 7 layer dip? Those ham and cheese sliders that some people call funeral sandwiches, definitely. Ambrosia salad, though I don’t typically eat this one because…oranges. A

California Cobb Sandwich

March 25, 2020 by Nicole Collins This week, I am the self-proclaimed Sandwich Queen. Somebody get me a crown! Quick detour down memory lane…growing up, my mom used to call me Queen Elizabeth. I can’t imagine why. It’s not like I act like a princess or anything. For real though, in the grand scheme of things, I feel like I’m pretty low maintenance. Especially compared to some of the behaviors that you’d associate with someone that you’d tease about acting like royalty. Maybe when you have the middle name Elizabeth, you’re just asking to be called queen. But, I digress… This week, somehow my weekly menu ended up being sandwich themed. I have three sandwichy meals that I’m rotating between this

Green Tea Margarita

March 20, 2020 by Nicole Collins It’s cocktail time! I conjured up my inner Sandra Lee for that one! As promised, today is margarita day on The Yummy Muffin. I don’t think we’ve made a drink (alcoholic or otherwise) since our 12 Days of Beverages Challenge around Christmas time, and we are well overdue. I whipped this drink up a few weekends ago for National Margarita Day. That’s certainly not a holiday that my margarita loving self could let slip through my fingers! And let me tell you, I am obsessed. I have a tendency to be a little heavy handed with my tequila pouring when it comes to my margaritas (oopsie doopsie boopsie!), but I feel like I really exhibited some self control on this one

Roasted Jalapeno Hummus

March 16, 2020 by Nicole Collins Hummus for some of us. That’s the theme for today. Actually, hummus for all of us! Let’s not be stingy folks… So, you all know that I have a problem with collecting more kitchen gear than I’d ever need. Recently, I have this obsession with this brand of punny serveware called Mud Pie. I really need to move on to something new. It’s way overpriced, you have to hand wash everything (which I hate!), and the designs are really very basic with white ceramic and black lettering. BUT, the phrases are so cute! I can’t seem to help myself! Is it ridiculous that I spent $20 on a simple white bowl and a spreader that I probably can’t even use? Yes. Is it worth it so I c

PB&J French Toast Sandwich

March 14, 2020 by Nicole Collins Can we take a moment today to talk about one of my favorite things ever? Peanut Butter! I’ve told you guys before that I have a house full of peanut butter lovers, and I am the leader of the pack. I can’t even reach into the back of my pantry without Bisco losing his little mind, because he knows that’s where mama keeps the good stuff. I’m a member of this online supper club, and I recently posed a question to them about pairing avocado and peanut butter together after reading that this is a fairly popular combo. So in the spirit of research, I was nominated to test out this odd food combo. And honestly, it was fine. I wasn’t disgusted, but I wasn’t enamored.

Creamy Buffalo Chicken and Wild Rice Soup

March 10, 2020 by Nicole Collins I love soup! But every day, we get a little closer and a little closer to being out of soup season. And, I am SOOOO ready! I’m sure I’ve told you before that I have not always been a soup lover. But the older I get, the more I crave it. At work, we have a café that’s basically a full service restaurant. They publish a new menu every week, and the specials are different every day. Now we’re not just talking burgers and fries. We’re talking DIY themed bowls, exotic salads, hearty sandwiches and wraps, and 3 different kinds of soups every single day (amongst many other things). I’ve never eaten so much soup in my life as I have since they opened this café in our

Breakfast Quesadillas with Spicy Avocado Crema

March 6, 2020 by Nicole Collins Blogger real talk for a sec… Blogging is hard! Especially for an amateur with no formal cooking, photography, or internet training that just does this for fun to keep herself out of trouble. Rebel without a cause right here. Didn’t you know? My heart always fills with joy when someone tells me that they loved one of my recipes or that they think my pictures are pretty. And, I have to chuckle on the inside because I know what a bootleg photo set up I’m working with. Thank goodness for dollar store poster board and editing apps on the iPhone! Part of my reality is that there are just some foods that I don’t photograph well. I study professional’s pics and photo

Green Eggs and Ham Cups

March 2, 2020 by Nicole Collins “I do so like green eggs and ham. Thank you. Thank you, Sam-I-am.” That persistent! We're talking about Sam-I-am and his friend who didn't like his green eggs and ham today, because today is Dr. Seuss' birthday! How crazy is it to think that Dr. Seuss' books have been entertaining children (and adults) around the world for over 60 years?!? Dr. Seuss is such a staple in every household. I don't know that I can pick a favorite Dr. Seuss book. But, I do have a favorite quote of his. “Don't cry because it's over. Smile because it happened.” I've always loved this quote, and it wasn't until a few years ago that I learned it was a quote from Dr. Seuss.
