Happy 2018!

Did everyone have a great New Year's?!? Has everyone fully recovered from the festivities yet?

I'm telling you; the older and older I get, the more and more I'm watching the clock like “can I go to bed yet?”

Talk about partying like a rockstar!

What I really want to know is, what are your resolutions for 2018?

I've really been thinking long and hard about what my goals are for 2018. I feel like I crushed my 2017 resolutions, so I'm feeling even more pressure to get it right again in 2018.

In 2017, I really focused a lot on doing things that make me happy. I took a couple of small trips. I took some really fun cooking classes. I saw a lot of Broadway shows at the local theater house. I found joy in farmer's markets. I found a lot of new places to brunch. I dove head first in to church again. And, I started this blog!

It was a pretty great year!

But, the pressure of setting the right goals is kinda taking the fun out of it. Maybe that's why I'm struggling with committing to some challenges.

I'm kinda stuck on my personal goals, but I definitely have some blog goals in mind! I really want to test the water with giving you guys some recipe videos. And, I had so much fun doing our 12 DAYS OF COOKIES, that I'd love to do more series challenges like that. What do you think? Does that work for you guys? Anything else you want to see or do together? Please, tell me if there is!

Oooo...I just thought of a personal goal. I want to read more books!

This ends up on my list every year, and I always fail miserably. Maybe 2018 will be the year!

And, like most people, I'd like to drop the extra 10 pounds I picked up during the holiday season. (Who do you think was doing quality control on all of those cookies?!?)

Ok, that's 2 personal goals. I can work with that...

So, since most of us are trying to shed some pounds right now, I'm going to do us all a favor and and give us some noms that will support the cause. And today, we're having something totally fun a delicious.

PB&J Breakfast Parfaits!

These parfaits are not only easy to make, but they're sooooooo pretty! We eat with our eyes first, right? So, these are going to make us so happy we decided to be healthy today.

We start with some fresh berries. I chose to do a strawberry/blueberry combo, but you can use whatever berries you like. Strawberries are a source of vitamin C, while blueberries are loaded with antioxidants. Both are known for helping to regulate blood sugar. Which makes both of them a “must have” in our healthy parfait. I'm not much of a raspberry fan, but I bet those would go great with this too.

Our next layer is store bought strawberry greek yogurt. Greek yogurt is high in protein which helps keep us full, high in calcium which helps keep us strong, and full of probiotics which helps keep our digestive system clean. Check, check, check! I use a single serve container so the portioning out is already done for me. I told you, we're making this easy!

But, my favorite part (and the most indulgent part) of this parfait is the Peanut Butter Pretzel Granola. It's a simple homemade mix of pretzels, oats, peanut butter, vanilla, and agave. And, it is soooo good! Plus, all you have to do is run everything through a food processor, and you're done! The granola can be stored in an airtight container for about 2 weeks, so you can make a batch and have it one standby for half a month. Too easy!

While we're talking about this granola, it's not just good in this parfait. It's great with vanilla yogurt. It's great on ice cream. Or if you leave it a little chunkier when you grind it in the food processor, it's great as a snack all on its own! Gotta make sure you have options when you're being healthy!

PB&J Breakfast Parfait

Serves: 1 Print

Ingredients:

  • 1 container (5.3oz) strawberry greek yogurt

  • ½ cup mixed berries, I used sliced strawberries and blueberries

  • 3 tbsp Peanut Butter Pretzel Granola (recipe below)

Peanut Butter Pretzel Granola:

  • 1 cup pretzels

  • ½ cup old fashioned oats

  • ½ cup peanut butter

  • 1 tsp vanilla

  • 2 tbsp agave syrup

Directions:

  1. Make the granola: Add pretzels, oats, peanut butter, vanilla, and agave to a food processor. Pulse until fully combined and it reaches your desired texture. This can be stored in an airtight container or mason jar for up to 2 weeks.

  2. Build the Parfait: In a glass or mason jar, layer 1/3 of your mixed berries. Top with half of the greek yogurt container, then top with 1 ½ tbsp granola. Repeat layers of berries, yogurt, and granola, finishing with the last 1/3 of mixed berries. Serve immediately.

Recipe notes:

*This makes about 1- 1 ½ cups granola which can be stored for up to two weeks. So, you can make this again and again, or you can share with a loved one!

*You can use your favorite mix of berries, but I prefer strawberries and blueberries.

*You could also use a mixed berry or blueburry yogurt instead of strawberry flavored if you want to switch up your routine.

*I use 9oz Chinet cups for EVERYTHING trifle or parfait. They are the PERFECT size!
