I am sooooo ready for the weekend.
Like sooooo ready.
I know I've been telling you guys (probably a lot) lately that my plate has been super full. I've just got my hands in so many different projects right now that I am completely and utterly exhausted 110% of the time.
Usually, when I start to get a little burnt out, I just take a day off of work. Or, if I have a house project I want to work on, I take a day off of work. But, since I started this new job a couple of months ago, I lost 6 weeks of paid time off. So, I can't just take a day off of work when I feel like it anymore.
And, I didn't realize how hard that would be until I had to do it!
So, I could not be more excited for the 3 day weekend this weekend. I REALLY need that extra day to try and catch up on some much needed R&R.
Don't get me wrong, I've still got a busy weekend planned this weekend. I've got more kitchen stuff to work on. I've got at least one party. I've got a trip to the state fair planned. And that's just what's currently on the agenda. I tend to accept a lot of last minute invites, because I love an impromptu outing with friends more than anything! But, if I can help it, I'm not even getting out of bed on Monday.
That's a lie...a girl's gotta eat.
Anyway, what better way to cheers to the weekend, especially a holiday weekend, than with a cocktail!
And even though this weekend marks the unofficial end of summer, I'm still holding on tight to all things summer. So, today we're making a nice, bright, summery Spiked Blueberry Arnold Palmer!
This recipe is really quick and easy to mix together. Everything goes in the pitcher, gets a stir, and it's done. Easy breezy, lemon squeezy!
Literally...you have to squeeze a lemon for this recipe.
So, we mix a store bought blueberry lemonade (that you can find in the refrigerated section of the grocery store near the OJ [gross] and stuff) with some sweet tea vodka, a dash of agave syrup, and an extra squeeze of lemon juice. Garnish it with some sliced lemons and some fresh blueberries, and you're ready to serve!
This drink is a little sweet, a little tart, and a lot delicious. I have to warn you though, this drink goes down SMOOTH! This is the kind of drink that gets you into trouble, because it's so delicious and refreshing while secretly being a third vodka. So, please be smart, safe, and drink responsibly.
This was a big hit with my taste testers, so I'm positive this will be a big hit with your loved ones too. And of course, since this is a party weekend, you should totally double the recipe and make a big old pitcher for your end of the summer bbq's. I have a feeling this is going to make an appearance at the party I'm attending this weekend!

Spiked Blueberry Arnold Palmer
Serves: 8-10 Print
6 cups blueberry lemonade
2 ¼ cups sweet tea vodka
2 tbsp agave syrup
juice of 1 lemon
1 lemon, sliced
1 cup blueberries
Add blueberries and lemon slices to a pitcher. Pour in lemonade, vodka, lemon juice, and agave syrup. Stir well to combine. Refrigerate for at least 2-4 hours before serving. Enjoy!
*You can find blueberry lemonade in the refrigerated section of the grocery store with the orange juices and lemonades.
*This recipe can be easily doubled for a bigger party pitcher!
*Instead of diluting this drink with ice, freeze some extra blueberries and lemon slices before adding them to the drink to keep it nice and cool.
