Maryland Crab Dip

December 30, 2017 by Nicole Collins Can you believe this is the last Saturday of 2017?!?!?!?!?!?!?!?!?!?!? It's snowy out today, so I REALLY hope that's not a preview of what 2018 will look like! But for real, where has the year gone? Would you say 2017 was everything you thought it'd be? It's certainly been one for the history books, that's for sure. Though, I'm not sure that's a good thing. I do think I've eaten better this year than I ever have, so that's a plus! So many delicious things have made it to my belly! Today, we’re making one of my favorite things in the whole world. If someone asked me the “what would you want for you last meal” question, this would DEFINITELY be on the menu.

Southwestern Style Frittata

December 27, 2017 by Nicole Collins No more cookies!!! At least not for a while anyways. I love cookies. I’m a total cookie monster. And, our 12 DAYS OF COOKIES was SOOOOOOOOO fun!! But, I am cookied out. So, we’re back to real food today! Today, we’re having something that makes me feel warm and sunny inside...which I need because it’s forecasted to be between 15-25 degrees outside for the next week. YUCK! Weather like that makes it sooooooooooo hard to get out of bed. My warm, fleece lined bed is the only place I really want to be these days. I was sick most of the week last week, so I was in bed and passed out by 8:30pm at the latest all week. And, with it getting dark at like 4:30pm and

Day 12: Reindeer Chow

December 24, 2017 by Nicole Collins Guys…we made it to Day 12 in our 12 DAYS OF COOKIES!!! I can’t believe this is the last one? It’s been so much fun! I hope you guys didn’t gain too much weight the past few days. But, if you did, it was totally worth it. And there’s always that pesky New Year’s resolution right around the corner. We had Junk Food Cookies yesterday to help keep Santa’s belly nice and jiggly, but today’s cookie is for Rudolph and the Gang. Day 12: Reindeer Chow! These little nuggets may not be the prettiest, but they might just be my favorite of all of the cookies we’ve had over the past 2ish weeks. We start with the same type of peanut butter/chocolate mix that you’d use to

Day 11: Junk Food Cookies

December 23, 2017 Welcome to Day 11: Junk Food Cookies! If you haven’t decided what cookie to leave out for Santa yet, these should totally be it. These cookies have A LOT going on in them. Which makes them perfect to keep Santa’s belly nice and jiggly. I grant immunity to your bellies though! These cookies have chocolate chips. They have peanut butter chips. They have kettle chips. And they have pretzels. They have all of the best junk! The cookie base is pretty standard to a traditional chocolate chip cookie dough. We’re just adding in a bunch of extra things to help give us that salty/sweet balance that you all know I love so much. Some important things to note about this dough. 1. Chill

Day 10: Peppermint Mocha Nutter Butters

December 22, 2017 by Nicole Collins We're in the home stretch, folks. Welcome to Day 10: Peppermint Mocha Nutter Butters! Ok, so I know this one sounds a little weird. But, you trusted me enough to dip chocolate chip cookies in to fritos, so you should be able to trust me on this one too. I got the idea for this cookie after looking at a post from an account I follow on Instagram. The team that manages the account tries and reviews new junk food products on the market. So, I saw a post where they were raving about a peppermint mocha peanut butter. My first instinct was “ewww”. But, they talked about how it was “absurdly delicious” and “weirdly phenomenal”, so I couldn't stop thinking about w

And, today I'm helping you face your fears and achieve a MAJOR accomplishment! Today, we're making French Macarons with Ganache! Ok, so when we started this 12 DAYS OF COOKIES challenge, I promised you easy and delicious cookies. I'd say I've delivered on that promise so far, right? But, I don't think French Macarons have ever

Day 8: Chocolate and Frito Dipped Chips Ahoy Thins

December 20, 2017 by Nicole Collins We're getting crazy today on Day 8: Chocolate and Frito Dipped Chips Ahoy Thins! Ok, don't be scared. I know these cookies sound a little strange. But, I'm telling you, everyone that's tried them have been pleasantly surprised! This is one of those cookies that people will eat out of curiosity, if nothing else. But then, they'll realize how fantastic they are, and they'll keep coming back for more! You guys have trusted me this far with my salty sweet combos, so I need you to keep the faith! I like to use Chips Ahoy Thins as my base cookie. If you haven't noticed, I prefer the Thins version of most of the popular store brand cookies over the original. I ju

Day 7: Butter Toffee Cookies

December 19, 2017 by Nicole Collins It's Day 7: Butter Toffee Cookies! Ok, so things have been going a little too smoothly with our cookie challenge so far, so it's time for one of the “real talk” confessions that I'm sure you all love so much. This recipe is in no way what I intended to make when I set out on this particular journey. It was actually supposed to be an Apple Toffee Cookie. But despite the apple elements I added to this cookie, calling it an apple cookie would be an epic fail. It really doesn't taste like apple at all. However, though the end result is not what I was originally going for, this cookie turned out 100000 times more amazing than I ever expected it to be. So, the a

Day 6: Cookies and Cream Christmas Bark

December 18, 2017 by Nicole Collins We're at the halfway point! So, that means it's Day 6: Cookies and Cream Christmas Bark! Ok, so technically this is not a cookie. But, cookies are 50% of the ingredients, so I'm going to say it counts. Is anyone going to protest that? Didn't think so. So, this is one of those recipes that you really can't mess up. It's not meant to be perfect, so there's absolutely no pressure going in to this project. And, you get to let your inner artist come out to play! I've told you guys before how I feel about candy melts. I love them. I use them ALLLLL of the time, and I even use them as a white chocolate substitute sometimes for coating treats. Plus, they come in p

Day 5: Cookie Butter Cookies

December 17, 2017 by Nicole Collins It’s Day 5: Cookie Butter Cookies! That’s right, we’re turning cookie butter back in to cookies! And then, as if that wasn’t exciting enough, we’re adding chocolate covered toffee bits. I know! Cookie butter is just Biscoff cookies that have been run through a food processor long enough to turn it in to a peanut butter like substance. It’s readily available in pretty much all grocery stores these days, and you can find it in the same area as the peanut butter. So, that’s the star of the show! These cookies are so yum. The dough is very similar to a peanut butter cookie dough. In fact, there were moments that my brain was tricked in to thinking that I was e

Day 4: White Chocolate Dipped Golden Oreos with Crushed Pretzels

December 16, 2017 Greetings from Day 4: White Chocolate Dipped Golden Oreos with Crushed Pretzels!! We're doing one of my favorite things today...mixing salty and sweet in to one delicious cookie! You guys know how I roll, and you know how much I crave salty and sweet balance. Well, these cookies are one of my favorites. And, they're easy to make. And, they're really pretty. And, you could get away with calling them fancy with the right cookie tray! So, here's the scoop on these cookies. We start with Golden Oreos. I really love Golden Oreos. There are actually moments when I might just love the golden ones more than the chocolate ones! But, we're using the Golden Oreos Thins, not the origin

Day 3: Vanilla Chai Shortbread

December 15, 2017 It's Day 3: Vanilla Chai Shortbread! Today's cookie is kinda fancy, but it's so easy and so yummy! Who doesn't love a good shortbread cookie. They're so buttery, and they just melt in your mouth. I mean, that's basically what a shortbread cookie is: butter, sugar, and flour. No wonder they're so incredible! You start to see shortbread cookies a lot this time of year in those blue tins...you know the ones I'm talking about. But today, we're stepping up our shortbread game by adding some extra special flavor to it! Vanilla Chai. To achieve the vanilla chai flavor in our cookie, we're actually going to cut open a tea bag and dump the tea leaves right into the dough. Not only d

Day 2: Samoa S'mores

December 14, 2017 It’s a marshmallow world that we live in! So, that’s what we’re using in our cookies today! Welcome to Day 2: Samoa S’mores Cookies! I put you guys to work yesterday right off the bat with our Brownie Biscotti. But, I’m making up for it today by giving you a 2 ingredient no bake cookie. These cookies are simpler than simple, but they’re still kind of a show stopper. They’re so delicious! Your two ingredients are coconut caramel shortbread cookies and marshmallows. That’s it! I call these Samoa cookies because the most popular brand of these types of cookies are Girl Scout’s Cookies. Even though the ones we get on the East Coast are now called Caramel DeLites, they’ll always

Brownie Biscotti + The 12 Days of Cookies

December 13, 2017 Welcome to the 12 DAYS OF COOKIES!!!!!!!!!! I know…that’s A LOT of cookies! But, is anyone mad that we’re having cookies every day til Christmas? I didn’t think so. Side note…when did it become half way through December and only 12 days to Christmas?!? And also, when did it become only 19 days til 2018?!?! Does that mean it’s practically spring? Ok, so this is how it’s going to work. We’re having cookies EVERY DAY through Christmas Eve. And, I know baking cookies can be intimidating for some of you out there. That’s why at least half of our cookie recipes will be no bake! I know…I’m always looking out for you guys. Since I’m only so entertaining and I don’t think I have 12

Kale and Harissa Frittata

December 9, 2017 by Nicole Collins Is anyone finished with their Christmas shopping yet? I AM!!!!!!!!!!!! Not only am I finished, but the gifts are wrapped too! It’s such a great feeling! But, I’m totally the person that starts my shopping in June; so really, I probably should’ve been done in October or something. I can’t imagine being a Christmas Eve shopper. I’m a procrastinator to the core, but that’s cutting it a little too close for me. All the crowds, and the people, and the panic of finding the right thing with minus 24 hours to go…my heart rate is rising just thinking about it. And don’t get me started on Walmart. I do a lot of shopping at Walmart (can’t beat those prices), but I’m a

Coconut Shrimp Burger with Piña Colada Mayo

December 5, 2017 by Nicole Collins I so wish I was sitting on a beach in Hawaii right now. Instead, I'm standing in my kitchen staring at 4 dozen cookies trying to pick out my top 24. Do you have an idea how difficult that is? It's like trying to pick your favorite child! You see, I'm entered in a Christmas Cookie Bake Off Competition today for a local radio station. I'm presenting my Chocolate Chunk and Crab Chip Cookies in the “Most Unique Cookie” category. So, I made a full batch of cookies even though I only need to bring 2 dozen. And, I can't for the life of me pick out which ones are coming with me to win me the prize! Actually, I don't even think there is a prize. Just bragging rights

Single Serve Chilaquiles

December 1, 2017 by Nicole Collins Who loves breakfast?!?!? I know I sure do! I am absolutely one of those people that eats breakfast foods for breakfast, lunch, and dinner. Eggs are one of my favorite things ever. They’re easy, they’re cheap, they’re versatile, and they’re delicious! It’s funny because as much as I love breakfast, my breakfast patterns during the work week are pretty dull. Yogurt and banana. Monday-Friday. That’s it. Yogurt and banana. And, I don't always eat the banana. At least I switch up the yogurt flavors day to day. I used to be pretty simple when it came to my weekend breakfasts too. Scrambled eggs with onion and cheese, some tater tots on the side, and maybe some ba
