Crabby Poppers

January 31, 2018 by Nicole Collins I promised you another crabby recipe this week, and today I make good on my promise! On Sunday, we had Crabby Devils. Today, we're having Crabby Poppers! So, there are pretty much two kinds of jalapeno poppers: ones stuffed with cheddar cheese and ones stuffed with cream cheese. I've always been on team cream cheese. How about you guys? How do you like your poppers? I love jalapeno poppers! Back in my junk food diet days, there were many many nights where I had jalapeno poppers from the freezer section as part of my main course for dinner. I used to pull the pepper out of the batter shell and eat those separately, then just eat the cream cheese and breadcru

Crabby Devils

January 28, 2018 by Nicole Collins Anyone who knows me well is probably wondering “where's Nicole, and who's writing this post?” Well, I'm right here everyone. Don't worry. You see, I have a pretty diverse palate, but there are just some things that I like to keep as simple and basic as possible. Deviled eggs fall high on that list! I don't like deviled eggs with a lot of bells and whistles. Mayo, pepper, paprika. That's how I like it. And, I'm not shy about the fact that I only want a plain and simple deviled egg. I don't want onions, and pickles, and bacon, and all this other stuff in my deviled eggs. And don't even say the word mustard to me. Stay away from my deviled eggs! So, everyone t

Sweet and Crunchy Salad with Chicken

January 25, 2018 by Nicole Collins I love vegetables! Conditionally… I feel so grateful that I’m not one to turn my nose up at fresh greens. I’m happy that I can enjoy some cruciferous (<--word of the day!) veggies with dip. I love that you can hide veggies in baked goods. BUT…I pretty much only like veggies raw. It’s a completely different story when you start talking to me about cooked veggies. And then, there’s the whole orange thing. You know I’m not eating anything orange. Hence, conditional love. You guys should know by now that I have some texture issues when it comes to food, and I truly think that’s what my problem is when it comes to cooked veggies. There are some occasions where I

Mushroom Crustless Quiche

January 22, 2018 by Nicole Collins I'm busting my own myth today! You see, I always thought that a frittata was just a quiche without a crust. But, boy was I wrong! I love frittatas. I'm sure you can tell. I make them ALL of the time. Like this Farmer's Market one. Or, this Kale and Harissa one. But honestly, I make frittatas for a couple of really simple reasons. 1. They're really cheap to make. And 2. They're low carb. I'm a carboholic for sure. I love bread, and chips, and cookies, and pasta, and carbs, carbs, carbs! But, I also know that those carbs, carbs, carbs stick to my body like glue. So, I'll usually rob Peter to pay Paul by cutting carbs out of one meal to have more in another. A

Tuna Wrap with Sprouts and Bacon Mayo

January 19, 2018 by Nicole Collins We're taking the tuna sandwich to the next level today! I absolutely LOVE tuna fish. I'm talking about the canned stuff. Not the fresh tuna steak. Ironically enough, I don't like tuna filets at all. It's a texture thing. You know I have my issues. Anyways, tuna fish has always been a staple in my diet. When I was living at home, my mama would have a tuna sandwich waiting for me every Saturday when I got home from work. What a good mama! When I was in elementary school, I was at a friend's house playing, and she introduced me to putting cheese on my tuna sandwiches. I've been eating them that way ever since. I pretty much can't have tuna without cheese. When

Mexican Pizza

January 16, 2018 by Nicole Collins It's Taco Tuesday! I, for real, am wondering when Taco Tuesday will finally be recognized as a federal holiday so we can have every Tuesday off of work to eat tacos and drink margaritas. Doesn't that sound like the perfect life? I think I might start a petition. Anyone out there want to sign?!?!?!?!?!?!?!? Though it's Taco Tuesday, we're not actually having tacos today. Actually, we're having taco in pizza form. But, I can't imagine there's anyone in this world that's going to fight with me about having pizza today, either. Today, we're having Mexican Pizzas! So, I can't remember what flavor of yogurt I ate for breakfast yesterday, but I can remember exactl

DIY Jewelry Rack

January 12, 2018 by Nicole Collins This could possibly be one of my FAVORITE DIY projects, to date. And, my house is FULL of my DIY creations! Today, we're making a DIY Jewelry Rack! This project came about 100% out of necessity. Those are the best kind! You see, I'm kind of obsessed with all things jewelry. I love it. I can't get enough. My family and friends know this about me, so they TOTALLY hooked me up this year for Christmas. Just this year, I got 5 new necklaces and 1 new bracelet. And that's only my Christmas bounty. And, that's not including the jewels I gifted myself. I told you. I LOVE JEWELRY! It was getting to the point where I needed a better storage system, so I started doing

Mushroom Miso Soup with Shrimp

January 8, 2018 by Nicole Collins Is anyone else over the effects of this bomb cyclone yet, or what? It is WAYYYYYYYYYYYY too cold for me. Like, “tears start rolling down face the moment I step outside” too cold for me. And in a mean twist of fate, it's actually supposed to warm up in a couple of days to the 50's. But, it's supposed to be raining! In the words of Stephanie rude! Regardless, after the past week and half that we've had, 50 degrees is gonna make me think it's time for shorts and flip flops. Who would've thought we'd ever call 50 degrees hot! Thank goodness I'll be soaking up the sun in warmer climates in less than one month! I've got a trip to Florida planned that'

Single Serve Breakfast Totchos

January 6, 2018 by Nicole Collins Did you ever think totchos and healthy would be put in the same sentence? Well today, we're making that happen! How's the healthy eating going for everyone so far? I know we're only about a week in, but the first week is always the hardest. Research shows that it takes about 3 weeks to develop a new habit, so we're a third of the way there! As someone who has successfully embarked on a weight loss journey before, I can tell you what I've learned about the challenge of healthy eating. I am no expert, let's get that straight. But, I definitely feel like I can bust some myths based on my own experience. This biggest thing that I can say about a weight loss jour

PB&J Breakfast Parfait

January 2, 2018 by Nicole Collins Happy 2018! Did everyone have a great New Year's?!? Has everyone fully recovered from the festivities yet? I'm telling you; the older and older I get, the more and more I'm watching the clock like “can I go to bed yet?” Talk about partying like a rockstar! What I really want to know is, what are your resolutions for 2018? I've really been thinking long and hard about what my goals are for 2018. I feel like I crushed my 2017 resolutions, so I'm feeling even more pressure to get it right again in 2018. In 2017, I really focused a lot on doing things that make me happy. I took a couple of small trips. I took some really fun cooking classes. I saw a lot of Broad
