Bacon Cheddar Horseradish Potato Bites

December 29, 2018 by Nicole Collins Can you guys believe it's almost 2019?!? I'm still trying to wrap my mind around how quickly this year has gone by. But, only in some aspects. Does anyone else feel like this year has been a giant blur but yet the longest year ever all at the same time? I don't know about you guys, but I feel like Christmas was over in the blink of an eye. Months and months of prep for a few hours of family, food, and fun that ends in total exhaustion. It's totally worth it, though. I had a pretty great Christmas this year. What about you guys? How's your holiday season going so far? I hope it's been filled with joy and love! So the past couple of days, I've been seeing a

Painted Sugar Cookies

December 24, 2018 by Nicole Collins Tonight is the night! Santa Claus is coming to town, folks! And, he's coming TONIGHT! You guys got your cookies all ready to go for him? Or are you binge baking today? Because that's what I'm doing today! For the first time ever, I have the day off of work on Christmas Eve. And, the first thing I did when I found out my company is actually giving us the day off today was make plans to do something full of holiday cheer! So, I'm heading to the bestie's house for a day full of baking and boozing with her fam (they're helping me test a spiked hot chocolate recipe...aren't they sweet) before I head to the midnight candlelight service at church tonight. Though

Veggie Ramen

December 21, 2018 by Nicole Collins Baby, it's cold outside. It's dark outside too. And, I am over it. Today marks the first day of winter, and I'm already ready for it to be over. It's the darkest day of the year too. Have I ever told you that I'm afraid of the dark? But, on the bright side, tomorrow will be brighter. Literally. Day light starts getting longer minute by minute tomorrow, so I'll take it. And, every day through winter is one day closer to spring. This cold weather season has been a doozie already. I got the sickest I think I've ever been on Thanksgiving. I had a horrible head/chest cold for a solid two weeks before antibiotics kicked in and magically healed me. And, it's been

Peppermint Kiss Ice Cream Sundae

December 18, 2018 by Nicole Collins “So, leave a peppermint stick for old St. Nick hanging on the Christmas tree...” Happy Holidays.....HAPPY HOLIDAYS! Guys, Santa is coming in ONE WEEK! Be honest. Are you on the naughty list or the nice list this year? I'm not judging either way, but I'm going to bet you're ALL on the nice list this year. How could you not be? I must have been a really good girl this year, because I've been getting gifts and blessings all year. Though, I also feel like this year has been a whirlwind, and I can't believe we're 2 weeks away from it being over. Between changing careers, buying a car for the first time in 8 years, redoing my favorite room in the house, and taki

Snow Globe Gift Jars

December 15, 2018 by Nicole Collins The only place I like snow is inside of a snow globe. It's funny because as a kid you live for snow days. Free days off of school that you get to go outside and play with your friends all day before coming home to a big ol' mug of hot chocolate was pretty much the dream 20 years ago. But now when I have to do adult things like shovel myself out and drive in dangerous road conditions, I pretty much despise the snow. And don't get me started on how miserably cold it is when it snows. You guys should know by now that I thrive in warm weather. I know everyone out there dreams about a white Christmas, but my ideal Christmas is sunny and 75. Give me flip flops a

Cheesy Garlic Bread Crostini

December 12, 2018 by Nicole Collins It's the end of the road, folks. We've made it to Day 12 of our 12 Days of Appies challenge! We talked a little but yesterday about memorable food. Have you guys ever eaten something so delicious that you can still taste it, to this day, however many years later? There are a couple of things that fall on that list for me. But, one of the foods that I can still taste (and drool over) to this day is something so simple, it actually is probably going to sound really silly. Garlic bread. I was having dinner at the bestie's house at least a year or two ago, and her hubby made some garlic bread to go with some kind of pasta...baked ziti maybe. Who knows. I just

Rotel Sausage Balls

December 11, 2018 by Nicole Collins It's Day 11...the eve of the final day of our 12 Days of Appies challenge! I'm rethinking the above exclamation point. I'm actually kind of sad that our challenge is almost over. Have you guys had fun this challenge? Are you ready to be the star of your holiday parties this year?!? The treats I've shared over the past week and a half are sure to be memorable. And, that's the sign of a good bite! I went to a New Years party a couple of years ago, and I still think about a dip I had at that party. It's that creamy sausage Rotel dip. Have you guys ever had it? It's pretty much just sausage, Rotel, and cream cheese that you throw in a crock pot and serve with

French Onion Dip

December 10, 2018 by Nicole Collins It's Day 10. It's dip day. And, that means it's gonna be a good day! Even if it is a Monday. If you're entertaining this holiday season, or ever really, an absolute must for the menu is some kind of dip. It can be a hot dip, a cold dip, a trio of dips...there just HAS to be dip! You guys know I love to turn appetizers in to meals, and I can't tell you how often I center meals around any kind of dip. And, I love how many options of dippers I have when it comes to dip. Veggies (when I'm being good). Carbs...breads, crackers, chips, pretzel (when I'm being naughty which is 99% of the time). Throw some lunch meat or rotisserie chicken on the side, and I'm cool

Old Bay Popcorn

December 9, 2018 by Nicole Collins An eventful weekend has led us right here to Day 9 of our 12 Days of Appies Challenge! I truly feel like my dog mom skills are being challenged this weekend. Remember how I told you I was taking the pups to go see Santa this weekend? Well, that turned in to quite the fiasco. In the (maybe) 25 mins I was at the pet store, no one but me was looking at the camera during the Santa pic (not even Santa), little Bella pooed right in the middle of the store after the pic, then little Charlie slipped out of his collar and took off out of the store and through the parking lot. Thank goodness for the kind woman walking towards the store that helped me catch him. Then,

Hawaiian Pizza Sliders

December 8, 2018 by Nicole Collins I get to tell Santa what a good girl I've been this year today on Day 8! I'm going to see Santa, not once but twice today! First up, I'm taking the bestie and her kids to Breakfast with Santa at my church. Then, I'm going to grab my kids (the pups) and take them to get their picture with Santa a little later this afternoon. Santa is going to be a busy guy today! Since I'm going to have so much time with Santa today, I've been thinking of asking him to settle a debate for me. Pineapple on pizza: brilliant or worth all of the shame in the world? I'm hoping he's on my team. I'm TOTALLY team pineapple on pizza! I don't eat a ton of pizza, but Hawaiian pizzas ar

White Cheddar Cranberry Jalapeno Cheese Ball Wreath

December 7, 2018 by Nicole Collins It's Day 7, and we're more than half way through our 12 Days of Appies challenge! Today, we're going to get a little artsy. And, that means we get to play with our food! This is totally unrelated, but have you guys ever played that game, Chubby Bunny? The object is to stuff as many marshmallows in your mouth as possible while still being able to articulate the phrase “chubby bunny”. This game can really turn in to a hot mess. You've got people drooling all over the place because they've got so many marshmallows in their mouth. And, when they finally reach their breaking point, the discarding of the mouthful of marshmallows is not the most pleasant either. I

Baked Brie with Strawberry Jalapeno Sauce and Candied Pretzels

December 6, 2018 by Nicole Collins Don't worry. Brie happy! Because, it's Day 6! And, life is gouda! Before we get in to it today, I just need to say that I don't mean to sound cheesy, but you guys are really grate! That's what cheese said, right? I could go on all day! After all, sweet dreams are made of cheese. And, who am I to dis a brie? :-) Actually, I just pinned a bunch of cheese puns to my quotes board on Pinterest this past weekend, because I've got a project I'm going to work on if I ever find the time. I want to try my hand at wood burning, and I've got a cheese board first up on the project list. I'll let you know how it goes! So, I can't take credit for all of these clever solil

Sweet and Spicy Bacon Wrapped Shrimp

December 5, 2018 by Nicole Collins Ok, so you know how parents aren't supposed to have a favorite child? That's how I feel with my recipes, sometimes. Like, they're all my brain children. So, how could I love one any more than the other? But we are human; and today, on Day 5, I'm declaring that today's recipe might just be my favorite recipe from our whole 12 Days of Appies challenge. See how that was pretty non-committal? I said might, which means you can't hold me to anything. That's how that works, right? Anyway, we're going to have to put in a little more effort today than we have so far all week. But, I'm telling you! The end result will be 1000% percent worth it. Today, we're making Sw

Sweet Chili Meatballs

December 4, 2018 by Nicole Collins It's Day 4, and we're making a party staple with a twist! Today, we're breaking out the slow cooker. So, you already know that means we're not working too hard today! Funny story first. Don't ask me how. Don't ask me why. But, I have 4 slow cookers (and 1 Instant Pot). So, technically 5 slow cookers. Yup, 5. I've haven't always set out to have a gazillion slow cookers. In fact, for YEARS I've only had 2: a 7 qt one (which was my first one, is WAY too big for me 99% of the time, and I rarely ever use) and a 5 qt one (which I use ALL of the time). Within the past year, I've added a little 2.5 qt one to take on the go to heat dips and such (totally necessary)

Chicken and Donut Bites

December 3, 2018 by Nicole Collins We worked so hard making yesterday's fancy appie (not really), we're taking it super easy today on Day 3! The inspiration for today's recipe came from a food truck meal I had towards the end of the summer. So, the fact that I'm still thinking about that meal should really say something about what we're having today! Over the summer, my work arranged for food trucks to come set up for about a week and a half while we were waiting for our cafe to open. One of the trucks I was most excited about served chicken and donuts. I'm absolutely obsessed with chicken and waffles, so I knew I was buying lunch the day that truck was there. They had a couple of different

Honey Goat Cheese Tartlettes

December 2, 2018 by Nicole Collins We're getting fancy for Day 2 of our 12 Days of Appies Challenge! Today, we're making one of those treats that's a little off the wall, totally eclectic and gorgeous, and takes less than 30 mins in actual prep time. Don't you love those kinds of appetizers? This is one of those recipes that was a million different things in my head before it actually made it on the plate. I went back and forth from savory to sweet to savory to sweet. The only constant was the mini phyllo shells. Well, since I couldn't decide between savory or sweet, the ultimate outcome was a mix of both! You guys know I love my salty sweet mixes! So, what are we making? Today, we're making

Holiday Charcuterie Boxes + The 12 Days of Appies!

December 1, 2018 by Nicole Collins It's time for our December challenge! Last year, we had tons of fun doing the 12 Days of Cookies Challenge! But, I wanted to shake things up a little bit this year. So this year, we're celebrating with the 12 Days of Appies Challenge! That's right! Over the next 12 days, we're going to be enjoying ALL kinds of appetizers that are perfect for holiday entertaining but that can also be enjoyed all year long! Some of the appetizers that we make will just be the perfect combination of assembled ingredients; some will require a little more effort; but all will be really simple overall. And, of course, totally delicious! First up, we're making Holiday Charcuterie

Welcome to The Yummy Muffin. Where the food is yummy, the pups are cute, and the glitter is plentiful.
