November 30, 2019 by Nicole Collins Chicky chicky...buck buck buck! It’s chicken day here at The Yummy Muffin! Hopefully, you're not "poultried" out yet. Holiday season is upon us, and that means life is going to be pretty much “go, go, GO” for the next couple of weeks. These are also probably some of the most expensive months of the year for most of us, so we need to be responsible and save some pennies whenever we can. For those of you also feeling like you're already exhausted from this holiday season, this post is for you. Because, we’re going to take some help from the grocery story to make 8 servings total of 4 totally different, totally delicious meals on a nice low budget. Today, we’
November 26, 2019 by Nicole Collins I’m taking a stance on an important issue today. Brussels sprouts. Stop the brussels sprouts shaming! Ok, maybe I need to reevaluate what “important issue” means to me. But, for real. Brussels sprouts have been getting a bad name since the beginning of time. I mean pop culture uses brussels sprouts as a punishment in various forms of entertainment, so how could the poor things stand a chance? The truth of it is, brussels sprouts can go from “YUM!” to “eww funky” really quickly. It’s all about how you prepare them. I mean, they’re basically just little baby cabbages. And who doesn’t love baby sized things? Brussels sprouts will find themselves on many table
November 22, 2019 by Nicole Collins Don’t you love it when something seems fancier than it really is? Today’s recipe falls into that category. My church had a Christmas bazaar a few weekends ago, and I signed up to make some breakfast type pastries. The problem is is that I had ZERO time, and I was planning on selling crafts as a vendor at the bazaar too. So on top of doing double duty at work and trying to prep for my vendor table, I had a really small window to whip up some kind of something. So, as I’m looking around my kitchen thinking about how I can make something fast and delicious, this idea literally just popped into my head. Quick bread. Here’s the thing about quick bread. People c
November 18, 2019 by Nicole Collins Ok, folks. We’re officially in “eat your face off” season! Hide your scales for the next month and a half, or so. Truth be told, in true Libra fashion, I usually fall on both sides of the health-o-meter this time of year. I struggle with the seasonal changes, so I usually make sure I eat super healthy for the most part during the colder months. Lighter, brighter foods equal sun and fun in my mind, so I usually try to stay away from the super heavy stuff. On the other hand though, I certainly don’t turn my nose up at all the holiday pastries and candies and all out comfort food that surface this time of year. And, I can tell you that I’m not just eating sal
November 15, 2019 by Nicole Collins Have you guys picked up any new shows this season? I'm always afraid to start watching brand new shows, because I don't want to fall in love with a show that's going to be cancelled as soon I get hooked. Which always seems to happen to me. I have recently just started watching Queer Eye on Netflix. I started out by seeing Karamo on Dancing with the Stars (whom I remember from his MTV days) and wanted to see what he was doing on this show. So, I put it on as background noise one day, became glued to the tv, and now I basically love the show. There was an episode from this past season where Antoni said everyone thought he was crazy for putting greek yogurt i
November 11, 2019 by Nicole Collins We’re addressing two of my most recent cravings today. Cinnamon sugar and cheesecake. Talk about random! I’ve told you guys over and over that I’ve been doing a lot of reading lately. In some of the books I’ve been reading, food has played an important role. And, we all know I’m totally on board for stories like that! One of the books talked about how the heroine’s favorite midnight snack was cinnamon sugar toast. I’m drooling just thinking about it. In another book, I was telling the bestie that I had a cheesecake craving. And no sooner did I text that to her did I read a part about the hero in the book buying an apology cheesecake for his girl. And, I’ve
November 7, 2019 by Nicole Collins We're putting our fancy pants on today! And, we're making a fun twist on a traditional recipe. And, we're giving Sunday's special sauce a second life today. AND...just kidding. I'm out of “ands”... Today's recipe is actually one of those two for one kind of recipes. There's the base recipe which can be used in lots of different ways on its own. And, then there's the bonus recipe which is actually how I suggest eating our yummy noms. The idea for the base recipe came from my work friend, Kathy. She's my food buddy at work, and we're always talking about food and trading recipes with each other. I was telling her how I was on the hunt for some green tomatoes,
November 3, 2019 by Nicole Collins It's National Sandwich Day! And boy have I got a sandwich for you!
There are a few fleeting moments when I have real strokes of genius, and today’s recipe is exactly one such occasion. I told you guys that I’ve been doing a lot of reading lately, and today’s recipe is totally inspired by this book series that I’ve been reading that's set in the bayou of Louisiana. The series is called Boys of the Bayou by Erin Nicholas, and I am just so in love with these books. I devoured each of the 4 books in, like, a day.
And, I’m basically ready to pack up and move to the bayou. One of the main themes of the series is the amount of family time spent at Ellie's bar,
