April 28, 2020 by Nicole Collins I am so tired of rain! Like, SOOOOOOOOOO tired of doom and gloom and grey skies and torrential downpours. I know that April showers bring May flowers and all, but it’s been raining for like a year and a half straight in Maryland. Usually by this time of year, I get to turn the heat off. I get to open the windows. I get to start the lawn chore season. Spring is usually my favorite time of year. But, the constant rain and endless grey is starting to get out of hand. It’s been so cold that I’ve actually shivered myself to sleep the past few nights (under 3 doggies, fleece sheets, and a thick comforter). And, don’t even get me started on my back yard. I’ll now be
April 24, 2020 by Nicole Collins Do you know anyone that’s a hoarder? I wouldn’t call myself a hoarder, per se. There are just some things that I can’t bear to part with. In my defense, most of those things are kitchen related. So, that makes them a necessity. Though, I did throw out half a drawer full of spatulas once, and that was a really big moment for me. Anyways, I definitely have some gadgets that have been “demoted” to the basement storage area. But with the extra free time at home now, I’ve been pulling out some devices that haven’t seen the light of day in years. Like the panini grill that made the best grilled crostini ever. I even thought about finding a place for it on the kitch
April 20, 2020 by Nicole Collins The #quaratinefifteen is real! Seriously though, does anyone feel like all bets are off right now? I have absolutely no feeding schedule. I eat brunch, lunner, and 15 snacks a day. I'm eating more bread and potatoes than ever. And, I've eaten more pasta in the past month than I have my entire life. On the plus side, I'm making lots of space in my pantry for a whole bunch of new things when I can shop at my leisure again! Since I'm basically the pasta queen these days, it's only appropriate that we make some pasta together. And, that's just what we're going to do today. So today, we're making Chicken Parm Pasta Bake! Now, I actually tested this recipe before t
April 18, 2020 by Nicole Collins What's the craziest thing that quarantine has made you do? I was watching this video online the other day of this woman using a bread knife to cut her hair, because she was tired of the rat's nest it had become from not brushing it for two weeks. Then, after she got the majority of it off, she ran some clippers through it and gave herself a mullet. And all I could think to myself was “wouldn't just taking a shower have been a much easier solution?” I had a ridiculous moment earlier in the week. Not quite that cuckoo, but I'm certainly still rolling my eyes at myself. I've been having this insane craving for a beer. I'd actually been craving a Corona Light lon
April 14, 2020 by Nicole Collins Does anybody know what day it is? I have to think about the answer to that question a LOT harder than I used to have to. There have definitely been days where I can't remember if I'm supposed to log in for work or not. And, there's definitely been a Saturday when I got all the way logged in before I realized I wasn't supposed to be working. I'm actually kind of enjoying this quarantine. With the exception of how much I miss the grocery store, I'm perfectly content to stay home with the pups, work on my herb garden, and just kind of enjoy my home. Sure, I miss my friends. But we talk daily, so that helps to make it feel like we're not missing a beat. What I'm
April 8, 2020 by Nicole Collins We have a birthday in the house today! But before we get to that, how's everybody doing during this completely insane world crisis? I hope you all are safe, healthy, and thriving. I'm not one that usually stays in tuned to the news, but this COVID-19 craziness is kinda hard to avoid. Does anyone feel like it's getting more and more unbelievable every day? I'm super fortunate to be able to work from home and not have any kiddos to teach while I'm trying to do it. Though Bisco has definitely been testing the limits lately, I can send him to his time out pillow to pout for a few minutes then be done with it. But to all you parents that are pulling quadruple duty
Welcome to The Yummy Muffin. Where the food is yummy, the pups are cute, and the glitter is plentiful.
