Heirloom Tomato Tart

July 31, 2017 by Nicole Collins Today's recipe was not on the agenda for me at all this week. But, I was SOOOO inspired by the Farmer's Market this weekend, I just couldn't help myself! Don't you love it when that happens? On about Thursday of last week, I decided that I just had to visit the Farmer's Market over the weekend. All last week, there was a “buy local” challenge on Instagram, so a lot of the local markets and people that I follow had been posting pics of gorgeous eggplants, and tomatoes, and peaches, and all kinds of other beautiful produce all week. I needed to get in on it. The problem, though, was that it was scheduled to rain allllllll day on Saturday, which is the day I want

Asian Shrimp Avocado Toast

July 28, 2017 by Nicole Collins Avocado toast is getting a MAJOR upgrade today! We're going way beyond mashing avocado and slapping it on some toast. Though, I'd never turn my nose up at avocado in any form that it takes. It's funny, because I used to hate the idea of avocado. I wanted nothing to do with it. I didn't like the look of it. I didn't like the taste of it. It was not even on my radar. Then one day, I ordered something at a restaurant that had guacamole on it, and for some reason I decided to try it. And, I loved it. Since then, I can't get enough of it! I want avocado with eggs. I want it on tacos. I want it on nachos. In salads. Is salad dressing. In brownies. On toast. I want s

Home State Wood Plaque

July 24, 2017 by Nicole Collins I've been crafting ALL weekend! It's been a while, too, as I'm sure you can tell. I've had a few projects on my mind for a while now, so I finally made time to make some new home décor for myself! Today's project celebrates my home state. Ironically enough, I'm working every angle I can to leave Maryland. It's just not for me anymore, even though it's all I know. The winters are probably the number one reason I want to leave. My body just can't handle the cold anymore. And being a responsible adult that's considered “essential personnel” really sucks when you have to dig yourself out of the snow at 4am before white knuckling your way to work. And then there's

Almost BLEAT with Chipotle Cream Cheese

July 21, 2017 by Nicole Collins I'm taking you guys to my happy place today...brunch! I LOVE brunch! But, really I just love breakfast food. And, any excuse to eat breakfast food is more than fine by me. That's why I love breakfast for dinner, breakfast for lunch, breakfast for brunch, breakfast for midnight snack... I think you get the gist of what I'm telling you here. Today's recipe is one of my top “go to” meals that fits all of the above categories. Well, maybe not breakfast for lunch. I haven't quite mastered poaching an egg in the microwave. I make this ALLLLLLL of the time, but I must be embarrassingly honest with you (as I always am). The last time I made this dish, it was an epic f

Fish Tacos with Watermelon Corn Salsa

July 18, 20117 by Nicole Collins Happy Taco Tuesday!!! It's been a while since I've given you a taco recipe, but have no fear. The wait is over! Speaking of over, can you believe that summer is half over already? Like, where has the time gone?!? I feel like this summer has been super busy. How about you? Have you guys been up to anything fun? Any good vacations on the books? I've been keeping my weekends pretty busy, but this past weekend was especially eventful. I currently have vacationing on the brain big time, because this past weekend I went to a timeshare presentation. Have you ever been to one of those? It's REALLY hard to say no! So, here's what happened...apparently I signed up for

Single Serve Truffle Parmesan Popcorn

July 15, 2017 by Nicole Collins I feel like I'm always giving you my confessions, and I've got another one for you today. I LOVE POPCORN. That's not the confession though. The confession is that I can and have, on many occasions, eaten an entire bag of microwave popcorn all by myself. Like, I've eaten a bag of microwave popcorn that was intended to be 4-5 servings (roughly 15 cups) as a meal...more than once. My accomplice of choice was the pour over butter kind. It had a separate packet of movie theater style butter that I could drink. I'd run my fingers around the bowl and lick it clean. It was BAD. That was also 50 lbs ago (which seems like a lifetime ago), so there's no secret what my ba

Rainbow Naan Veggie Pizza

July 11, 2017 by Nicole Collins Vegetables are pretty! Especially rainbow veggies on a pizza! I've told you this before, but this is my favorite time of year to eat. Produce is in it's prime right now, in my opinion. There are so many options that are fresh and in season, meaning it'll taste the best it'll taste all year. The colors, the smells, the varieties. My fav... I LOVE vegetables, but only raw. I know. Weird, right? There are only a few veggies that I'll eat cooked. And if I do eat them cooked, it needs to be a “just barely” kind of thing. I'm all about that crunch. But, there is one vegetable that is my arch nemesis. The carrot. YUCK! I don't like anything orange (fruit, vegetable,

Cream of Crab Soup

July 7, 2017 by Nicole Collins There are 2 types of crab soup eaters in Maryland. You're either on team “Maryland Crab” or team “Cream of Crab”. Rarely, are you on both. It's not like you can only have one or the other, because that would be BIG TIME missing out. But, most of us have our “go to” selection...the soup that we always order at a restaurant without even considering the other option. Maryland Crab Soup is a tomato based soup full of hearty veggies, spicy broth, and of course, crab meat. Most true Marylanders like to simmer leftover crab shells in the broth base for that extra crabby flavor. And most also prefer claw meat as opposed to lump crab meat in the Maryland style soup. I'l

Roasted Shrimp Salad with Cherry Vinaigrette

July 3, 2017 by Nicole Collins I'm going through a MAJOR cherry obsession right now. It's the craziest thing! This year is the first time EVER in my life that I've EVER even eaten or bought a fresh cherry. But, I just can't seem to get enough! In the past month, I've put cherries in my smoothies, in my cocktails, in my appetizers, and now, in my salads. Lots of cherry recipes coming soon! It's funny, because I don't like like cherry flavored things. So, I just assumed that I didn't like cherries. I do like a nice marachino cherry on top of my icecream sundaes, but I knew that wasn't the same. I bought some frozen sweet cherries for my Unicorn Smoothie, because I knew it would give me a prett

Fireworks Cupcake Jars

July 1, 2017 by Nicole Collins Can anyone believe that today is the first day of July?!?!? How are we at the halfway point of 2017 already? This year is FLYING by. I'm gonna need summer to slow it down a little bit. It just got here! But the good news is that if today is July 1st, that means July 4th is right around the corner. And that means BBQs, and parties, and fireworks, and desserts. And celebrating the birthday of the USA, of course. I have a confession to make though. This is a sad one. I couldn't tell you the last time I actually stayed awake to watch fireworks on the Fourth of July. #oldlady The thing is is that it's all fine and good that we get off of work on the holiday, but wha
