Bunny Napkin Rings

March 29, 2018 by Nicole Collins We are making the most ADORABLE spring craft today! Just in time for Easter, too! I got the idea for today's project from a catalog. You know, one of those ones with the unique and unusual knick knack type stuff (that is usually way overpriced). My mom and I are both suckers for this one company, in particular; and we both order stuff from them all of the time. So, I was perusing through the catalog one day, and saw these super cute napkin rings. But, they were a little pricey on their own. Plus, this particular book has high shipping rates. It could've easily turned in to a $20 purchase. They were cute, but not that cute. So, of course, I thought to myself “

Chipotle Pineapple Chili

March 26, 2018 by Nicole Collins We’re putting a new little Mexican style spin on a classic today! Today’s recipe was inspired by a conversation I had with someone a few weeks ago. She was showing me pics of a chili cook off party that she went to. There were 5 or 6 different kinds of chili, and none were like the other. But, the one that stood out to me (and I think it was the one she brought) was a bowl of chili with a slice of pineapple sitting on top as garnish. My first instinct was “that’s weird”. But, after a second thought, I was like “or is that brilliant?” The more and more I thought about it, the more and more I knew I wanted to make some kind of chili with pineapple incorporated

Everything Bagel Breakfast Pizza

March 24, 2018 by Nicole Collins Guys…I think I just reinvented the wheel! Ok, so you know how there are some things in life that are just perfect as they are? Like, if it ain’t broke, don’t fix it? I feel like that’s how everyone has always felt about the BEC sandwich. You know what I’m talking about. That classic breakfast sandwich…bacon, egg, and cheese. The bread choice is optional. Toast, biscuits, bagel, ciabatta…they all work deliciously. But put it on an everything bagel, and time stands still for a second. You just can’t beat a classic sandwich like that. A perfectly cooked egg, crispy bacon piled high, topped with gooey American cheese. And, I’m drooling. This sandwich is just so f

Toasted Pound Cake with Lemon Cream

March 20, 2018 by Nicole Collins It's the first day of spring!!! FINALLY! Ok, so maybe I'm being a LITTLE dramatic. I have to admit, this winter has not been totally awful. It has certainly been rainy, and gloomy, and miserable. But, we've actually been blessed with some milder days over the past few weeks which made winter feel not so horribly long. Except for this week, ironically enough. There's a BIG snowstorm in the forecast for today and tomorrow. How unfair, right? Did Mother Nature get her wires crossed or something?, there's that. Isn't the warmth and sunshine supposed to be blessing us on a day like today?!? On a separate note, the first day of spring means it's March 20.

Salted Vanilla Cupcakes with Bailey's Buttercream

March 16, 2018 by Nicole Collins Who’s ready to party like they’re Irish tomorrow? I know I am! But, I’m actually Irish, so I think that means I get to double celebrate. I mean, I am going to 2 parties tomorrow… Yup, totally ready to wear my green loud and proud. One of the parties is a potluck, so I knew I was bringing dessert. I had originally had this trifle in my mind that I wanted to make. But, it involved chocolate. And, we all know that I can’t have chocolate right now. I didn’t want to feed anyone anything that I hadn’t tasted first (<-- the excuse that helps me sleep at night). So, if I can’t have it, you can’t have it either. Sorry! I knew that I wanted to do something with Baileys

Ham, Cabbage, and Pierogi Soup

March 12, 2018 by Nicole Collins Sometimes, there’s just nothing better than a big old bowl of soup. It’s funny, because I never used to be a soup eater. I never used to be a hot tea drinker either. I guess it’s something about hot liquids that just didn’t do it for me. Unless it was Cream of Crab Soup. I’m always a Cream of Crab Soup eater. Plus, I also kinda thought soup was too much work. You have to carefully maneuver the soup’s contents on to the spoon so that you’re not just drinking air. You have to go back in a million times to be able to finish eating/drinking your soup. And, for someone with shaky, unsteady hands, it can be a little messy. No need to ask how I know that. But, the r

Breakfast Burritos

March 10, 2018 by Nicole Collins I am totally setting you guys up for success next week and for weeks to come! Ok, so breakfast is the most important meal of the day, right? At least, that’s what the grownups say. Well, I’m making sure we can have an easy, fast, filling, delicious breakfast whenever we want! I love breakfast food. I’m sure you guys have been able to figure that out by now. But honestly, I never used to be great about eating breakfast during the week. I never could seem to find the time to pack myself breakfast AND lunch. So, I’d end up grabbing a pack of crackers or a candy bar to hold me over til lunch. Or even worse, I’d just eat nothing til lunch, and then totally binge a

Meal Prep Chicken Fajitas

March 6, 2018 by Nicole Collins Today, we’re having one of those recipes that was inspired by necessity. But, probably not in the way you think. You see, meal prepping is taking the internet by storm right now. But, I’d just like to note that I’ve been meal prepping and making make ahead meals for years. For once, I’m not on the tail end of a trend! Maybe, I was even the innovator… Who knows! I’m sure I’ve told you this before but I have a SMALL kitchenware shopping problem. I have kitchen items (plates, small appliances, table décor, serving ware, etc) in literally every room of my house. And, I’m not misusing the word literally. So naturally, these adorable meal prep glass containers are i

Fluffernutter Popcorn Bars

March 2, 2018 by Nicole Collins We're wishing Happy Birthday to Dr. Seuss today! When I think of Dr. Seuss, the first word that comes to mind is whimsy. He just had such a unique but vibrant way of approaching learning. Fun, fun, FUN! I wanted to make an “inspired by” Dr. Seuss recipe for today in honor of his birthday. Now, the knee jerk reaction would be to make Green Eggs and Ham, right? Well, it was for me anyway. But here's the thing, I made a pretty delicious interpretation of Green Eggs and Ham that I really wanted to share today. Sam-I-am would've been really proud. And, his friend would've been saying “thank you, thank you” much sooner in the story had he had my Green Eggs and Ham.
