Bean and Cheese Breakfast Enchiladas with Poblano Sauce

August 31, 2020 by Nicole Collins Welcome to Meatless Monday! We’ve had a couple of these around here at this point. What do you guys think? Are you into it? I’ll tell you this, I really enjoy the challenge of figuring out how to build a meatless meal. I wouldn’t say that I’m a hard core carnivore. If anything, I think I could happily live a pescatarian life. But, I guess I never really realized how much animal flesh that I truly do consume. So, I like that I have to work my brain a little harder in order to dream up a delicious and filling meatless meal. And, today’s recipe sat in queue for a hot minute. Let me tell you how it started. I learned about this new product that Herdez has recent

Salmon with Old Bay Mustard Cream Sauce

August 29, 2020 by Nicole Collins Has anyone else been buying themselves quarantine presents? A.K.A...has anyone else been excessively online shopping while trapped inside the house? No? Just me? I don't believe that. But, I won't make you admit anything that you're not ready to own up to yet. You can keep living a lie a little bit longer. Well, my name is Nicole; and I've done way too much online shopping these past few months. My quarantine gifts to my self have ranged anywhere from new serving bowls, to a resin beach cheeseboard, to a wood fire outdoor pizza oven. I've REALLY rewarded myself for doing my part and staying indoors during this pandemic. Yeah, that's why. In reality, I'

Green Beans with Creamy Basil Dressing

August 26, 2020 by Nicole Collins Where the heck did the summer go? I mean, I know that the concept of time basically doesn't exist in a global pandemic. But, what the darn heck? Halloween candy and decorations are out. Though, that's cute that people think that Halloween is happening this year. People in my supper club group keep posting “fall” recipes. Pumpkin spice everything is popping up anywhere. Like, didn't it just become warm enough to play outside? And we already have to start thinking about winter hibernation? What. The. Fudge. I think my herbs that have been flourishing ALL summer are starting to feel their age too. We had a couple weeks of pretty consistent rain, and they ha

Tuscan Shrimp and Grits

August 23, 2020 by Nicole Collins Chef's kiss. Today's recipe is so incredibly, amazingly everything; that I don't know what else to say other than “chef's kiss”. You know what I'm talking about. When something is just too good for words that the only way to describe it is to kiss your fingers like you're Italian, throw them in the air, and give the dish your loving seal of approval. I mean, I want to tell you about today's recipe so badly that I don't even have a story to tell you today. I can't think of anything but this comforting bowl of deliciousness. But, since I don't want to let you guys down by depriving you of your daily dose of anecdotal joy, here's the best that I can do today..

Sun Dried Tomato Chicken Pasta Salad

August 21, 2020 by Nicole Collins I think it's very possible that I'm turning myself into an Italian. I mean, I've always wished that I was Italian. But, as far as I know, there's no Italian in my heritage. Back in highshool, there used to be this jokester (someone that was a loud and proud Italian) that would say ”Do you have any Italian in you?” And then I, or whoever was the victim at the time, would say “no”. And then, he'd say...(kids, cover your ears)...”You want some?” Then, he'd give this little wink and a smile like he was the most Rico Sauve, clever guy in the world. *eyeroll* Anywho, I think I may be slowly but surely turning myself into an Italian the old fashioned way...throug

Brussels Sprouts and Green Apple Salad

August 19, 2020 by Nicole Collins Do you guys talk to your parents or children every day? If you don’t, you should. I do. I call my mama every single day. I won’t give you the “hold on tight to your loved ones, because tomorrow isn’t promised” speech today. But, know that I’m thinking it. Many conversations with my mom start the same way. During the week it’s “What are you doing? Watching TV, what are you doing? I just finished work.” On the weekends, it’s basically the same greeting. But instead of me telling her that I just finished work, I usually say that I just finished cooking. Then, she’ll ask me what I was cooking. Let’s just say that I didn’t get my palette from my mama, because way

Creamy Hummus with Summer Salad

August 17, 2020 by Nicole Collins I’ve got sunshine on a cloudy day. And at the time that I’m writing this post, it is pouring. I mean POURING. Like, we’re all currently locked in my kitchen, because the tiny pup refuses to go outside when the weather is like this; and I need to watch him so he doesn’t leave me a yellow, wet surprise somewhere in the house. It’s not just annoying rain pouring. It’s hurricane passing by, heavy downpour for hours type rain. And, it’s making me grumpy. You guys know that many times I write my posts in advance, so I hope that by the time you’re all reading this that the sun is shining bright. Now, that’s a thought that makes me happy. And if by some chance it’s

Breakfast Cheesesteak

August 15, 2020 by Nicole Collins Do you guys love any foods conditionally? I know I sure do. For example, I only like lemon in sweet dishes. If you want a savory dish to taste like lemon, forget about it. Now, there are plenty of foods that I’ll eat any time, any place. My love for them runs so deep that I’ll eat them in the most unheard of situations, if necessary. Peanut butter definitely falls on that list. Did I ever tell you about that time that i tried peanut butter avocado toast? I thought mayonnaise and eggs fell on that list too. But while working through today’s recipe, I realized that it didn’t. I love mayo. I’ll put it on everything. I even use it straight up as a dip more often

Cheeseburger Tacos

August 13, 2020 by Nicole Collins Cheeseburger in paradise… Heaven on Earth with an onion slice. Ok, now I have to finish it. Not too particular, not too precise. I’m just a cheeseburger in paradise! Whew, ok. Now that we got that out of the way….how’s everyone doing today? Obviously, I’m feeling like a little songbird today. I’ve been getting my music groove on a lot lately. You know it’s funny, but I usually have music on all day. I have a shower radio with rotating playlists that I listen to in the shower. I listen to the radio on the way to work. I have a little desk radio that’s set to a completely different station that I keep on in the background while I’m at work. Then, I listen to X

Southwest Veggies and Pepperjack Grits

August 10, 2020 by Nicole Collins It’s Meatless Monday! This is a tradition that I don’t think we’ve celebrated together before, but I’m going to try to be better about doing it. You guys cool with that? I’ve been thinking a lot lately about sustainable eating, so I figure going a few days without meat isn’t going to hurt us. And, it’ll help save the planet! The catalyst for this new interest in sustainable living was the Netflix show Down to Earth with Zac Efron. Let me tell you…if we didn’t already think the folks behind Netflix were a bunch of geniuses, we should now by their choice to have Zac as the show’s host. Honestly, I never would’ve watched the show otherwise. I didn’t even really

Everything Breakfast Burger

August 7, 2020 by Nicole Collins It’s no secret that I have a breakfast obsession. More than half the recipes we make here are breakfast or brunch meals. And, I’ve never heard one of you complain about that, so we must be doing something right! There is just nothing better in my opinion. You can do SOOO MUCH with breakfast foods. You can go savory. You can go sweet. You can have all the eggs, bacon, and sausage and really protein it up. Or, you can keep things strictly produce based by making a smoothie. And bonus, you can eat breakfast foods for any meal and nobody will judge you! I mean think about it. People wanted to eat breakfast foods for lunch, so they gave it a fancy name, designated

Chesapeake Bark

August 5, 2020 by Nicole Collins Do you guys ever eat something out and then obsess over how to recreate it at home? I know I sure do. I feel like that’s how we get so many of our recipes around here. I’ll eat something somewhere then start brainstorming and calculating and testing to figure out how I can recreate it at home. Or, since you guys know that I love to read restaurant menus (weird, I know), I’ll see something that looks intriguing and put my spin on it at home. The former is how today’s recipe was born! Early on in quarantine, I was craving some chocolate from a local candy shop. And, I saw that they were offering a delivery service. So, like many other times during this crazy qu

Mushroom Sandwich Frittatas

August 2, 2020 by Nicole Collins Do you guys remember that time when we used to leave our houses just for fun? Ahhh, the good old days. I never in a million gazillion years ever thought this quarantine/global pandemic situation would last this long. How naïve, right? As much as I’m a homebody and I don’t mind being home all day with the pups, I’m definitely starting to miss normal life. I’m so thankful that I have the opportunity to work 100% from home. I know that the majority of the population doesn’t have that luxury, so I really do count my blessings for that. I get super anxious wearing a mask, so I don’t know what I’d do if I was in a position that required me to wear one for 8+ hours.

Welcome to The Yummy Muffin. Where the food is yummy, the pups are cute, and the glitter is plentiful.
