Today, we’re making Cookie Butter Rice Krispie Treats!

IT’S MY BIRTHDAY MONTH!
Am I excited that it’s October and fall and dark and cooling temps? No. Am I excited that it’s my birthday month? Always.

It might be my birthday, but the recipes this month are gifts for all of you! We’re going sweets and treat all month long, and we’re kicking things off with gooey rice Krispie treats made with one of my favorite sweets of all time: cookie butter.

The birth of this recipe could not have been simpler. I was staring at my pantry one day thinking “wow, I haven’t made rice Krispie treats in a while”. And that quickly went to “wow, I haven’t done a fun new RKT recipe in a while”. And then I caught a glimpse of the cookie butter jar in my pantry, and things quickly escalated to “wow, I guess we’re making cookie butter rice Krispie treats today”. And also, I have at least 2 more new flavors I want to test too. So, that’s fun!

This one comes together so easily. We’re taking my basic rkt recipe and adding a scoop of cookie butter to it. That’s it! Now almost every time I make something with cookie butter, someone asks me what it is. So, let’s go through that quickly. Cookie butter can be found in the peanut butter section of the grocery store. It’s basically just speculoos cookies that have been blended into a paste that mimics the texture of peanut butter. Most people are familiar with Biscoff cookies, and those are just the most popular brand of speculoos cookies. The flavor is sweet and caramelly with notes of warm spices like cinnamon. It’s almost like a slightly sweeter, less aggressive gingerbread.

For our rice Krispie treats, we’re going to melt a little butter in a large heavy bottomed pot. Then, we’ll add in a bag of mini marshmallows that we’ll stir constantly until melted, as well. Next, we’ll add in a nice scoop of cookie butter, and keep stirring until that’s nice and melted into the marshmallow mixture too. Pull the pot off the heat, stir in a little splash of vanilla extract, and mix in the crispy rice cereal.

We’ll transfer the mixture to a foil lined, lightly spritzed baking dish to help make these easier to cut once they’re set. Gently press the mixture into the pan. Then, I like to crush some extra Biscoff cookies and press them into the top of the treats. It’s optional, but it does add a really lovely crunchy texture to our chewy, gooey treats.

Let them set for about an hour, pull the treats out of the pan with the foil, and cut the treats into squares. That’s all there is to it! These are the comforting, nostalgic treat you know and love elevated with that decadent spread of warm spicy cookies. They’re sweet, flavorful, and oh so delish!

Ok, everyone. Here’s a hint on the next RKT flavor we’re going to try out: it involves lemon. Any guesses?

Cookie Butter Rice Krispie Treats
Serves: 16 Print
Ingredients:
1 bag (10 oz) mini marshmallows
5 tbsp unsalted butter
½ cup cookie butter
¼ tsp vanilla extract
6 cups Rice Krispie cereal
4 Biscoff cookies, crushed
cooking spray
Directions:
Line a 9x9 baking pan with aluminum foil. Lightly spray it with cooking spray. Set aside.
Melt butter in a dutch oven or large pot over medium heat. Add marshmallows, and stir constantly until completely melted. Then add cookie butter, and stir constantly until completely melted. Remove from heat, and stir in vanilla extract.
Stir the cereal into the marshmallow mix until completely coated. Spritz the back of your spatula with cooking spray, and gently press the cereal mix evenly into the prepared pan. Top the treats with crushed Biscoff cookies, gently pressing them into the top to adhere. Allow the rice krispie treats to sit for at least 1 hour to cool and set.
Remove the bars from the pan by lifting the foil out of the dish. Cut into 16 squares. Serve!
Recipe notes:
*I like to use creamy cookie butter for this recipe, but crunchy would be great too to add a little extra texture inside of the treats. Totally up to you!
*If you’re not familiar with cookie butter, it can be found in the peanut butter aisle at the grocery store.
*Leftovers can be stored in an airtight container for up to 3 days.
