Today, we’re making Apple Donut Baked Oats!

Why didn’t anyone tell me baked oats is basically just pupcakes for humans? Cake for breakfast? How did I not know this?
We all know overnight oats have been super trendy for a couple years now, and oatmeal was the breakfast of our elders. But, I’ve never been able to stomach either. I really REALLY tried with overnight oats, but I just can’t get past the texture. Then recently, I saw a video of someone making baked oats. And as I was watching the ingredients, I was like “wait a minute…”. Then came the “AHA” moment, because the ingredients were basically the same as my doggie cupcakes. And I realized that by adding some flavor and a little more moisture, I could have cake for breakfast. So, that’s what we’re making today!

This recipe could not be any easier. All we need to do is toss everything in a blender, and hit the button!
Let’s start with the oats. We want to use rolled oats, sometimes called old fashioned oats, for this recipe. There are various different types of oats out there, but this will not bake up correctly if you grab the wrong one. There’s even oat flour that you can buy now, but we don’t need it. Our oats will get blended down with everything else, so save your pennies.

For our wet ingredients, this becomes a little bit of a kitchen clean out situation. We’re going to add in a super ripe banana for sweetness, a little applesauce which functions as an oil replacement and helps up the apple flavor, some vanilla Greek yogurt for protein and moisture, and some maple syrup for a touch more sweetness. The oats are pretty dry, so they definitely benefit from having some extra wet ingredients in the mix to help them along.

To flavor our oats, we’ll add in a little apple pie spice, an extra hit of cinnamon, and a tiny pinch of salt to balance out all the sweetness. We’ll add in an egg and some baking powder to help it rise. Then, we can blend everything together until it’s nice and smooth.

Once our mixture is blended, I like to stir in a shredded apple by hand. You could blend that in there too if you really wanted, but I like the extra texture it adds when you mix it in after the fact. You can use whatever kind of apple you like. You can even choose to leave the skin on or off (I leave it on). It’s totally up to you! Just get it mixed in there, and it’s ready to bake.

I’ve found that the perfect baking vessel for this recipe is actually my 12oz glass meal prep containers. They’re oven safe. They’re the perfect size. And, they come with lids to help store the leftovers. I use these meal prep containers for EVERYTHING, so I think they’re totally worth the $20 investment for a set. I have them in my Amazon storefront if you want some too.

You can choose to lightly grease your baking dishes or not (it’s fine either way). Divide your batter between 2 dishes, and finish it with a little sprinkle of cinnamon sugar on top. That last little detail is what really gives this apple cider donut vibes, and I LOVE it. Bake these until a toothpick comes out clean, let them cool for about 10 minutes, and it’s time to dig in.

These little personal sized baked oats are absolutely incredible. They’re sweet, they’re warm, they’re flavorful, they’re moist, they’re nostalgic, they’re satisfying…I could go on and on. It truly is like eating a comforting, seasonal dessert for breakfast. But really, you’re kicking your day off with protein and fiber. That’s a sneaky healthy treat I can get behind.

I really feel like the possibilities are endless now that we’ve cracked the code to baked oats. Should we make a pumpkin spice version next? Let’s keep this dessert for breakfast trend going.

Apple Donut Baked Oats
Serves: 2 Print
Ingredients:
1 cup rolled oats (or old fashioned oats)
1 super ripe banana
¼ unsweetened applesauce
½ cup vanilla Greek yogurt
1 egg
1 tsp baking powder
1 tsp apple pie spice
½ tsp vanilla extract
1/8 tsp cinnamon
Salt, to taste
2 tbsp maple syrup
1 apple, shredded (I use Fuji or Pink Lady)
½ tsp cinnamon sugar
Directions:
Preheat oven to 350 degrees.
To a blender cup, add oats, banana, applesauce, yogurt, egg, baking powder, apple pie spice, vanilla, cinnamon, a pinch of salt, and maple syrup. Blend well until fully combined and the oats are completely broken down. Add apple to the blender cup, and stir in by hand to combine.
Divide mixture evenly between 2 12oz baking dishes. Sprinkle the top with cinnamon sugar, evenly divided. Bake for 30-35 mins until a toothpick inserted in the center comes out clean.
Allow to rest for 10 minutes before serving. Enjoy!
Recipe notes:
*It’s not necessary to grease the baking dishes, but you can lightly spritz them with cooking spray. It makes them the tiniest smidge easier to clean, but that’s about it.
*You can leave the skin on or off when shredding the apple. I like it on.
