Today, we’re making Honey Old Bay Grilled Chicken!

This summer ended a 6 year, unintentional grilling hiatus for me; and now, I can’t be stopped. See what had happened was…back in 2020, my propane tank on my grill emptied out. But at that time, we weren’t leaving the house and I wasn’t a big griller anyway, so I just left the grill untouched. But over time, I created this panic in my head because I couldn’t remember how to replace the tank. For whatever reason in my mind, I felt like it was this intricate complicated task. (It’s not, it’s literally unscrewing a nozzle.) So 6 years later, I snapped out of it, turn on youtube to learn how to replace the tank, replaced the rusty grill grates, and my old abandoned grill was reborn. And now, all I want to do is grill, grill, grill!

I’ve been batch grilling chicken breast and freezing it so I can have a simple protein on hand at the snap of a finger. And part of that has been experimenting with different marinades and seasonings for the chicken. Today’s recipe was kind of a happy accident, and now I’m absolutely OBSESSED.
All we need for this one is 4 ingredients and 5 minutes. It’s so easy! We’re going to build the marinade in a ziptop baggie, so we don’t even have to dirty any dishes.

For the marinade, we need some avocado oil, a little garlic powder, a squeeze of honey, and a couple hefty tablespoons of Old Bay seasoning. That’s it! We’ll swish the ingredients around in the baggie to premix them, then we’ll add in our chicken. Now, as far as the oil choice goes, it’s not really the time for olive oil since we need something with a high smoke point. You could use veggie, canola, or grapeseed oil. But, I prefer the flavor of avocado oil for this.

We’re going to use the 5 minute marinade method for this chicken. And all that requires is gently massaging the chicken in the marinade baggie for 5 minutes straight. So let the air out of the baggie, zip it close, and get to work. I like to take a short walk around the house while I do this to help pass the time. But, gently rub that chicken in the bag, making sure to flip it around so it gets even contact with the marinade, and the chicken is ready to grill. Using the 5 minute marinade technique really helps to quickly infuse those flavors into the chicken while also tenderizing the meat. You can actually feel the meat softening right in your hands. It’s pretty magical!

I usually have my grill preheating over medium high flame to somewhere around 400-450 degrees while I’m marinating the chicken, so you can toss it right on the grill once you’re done. I like to rub the grates with a little more avocado oil so the chicken doesn’t stick, get your chicken on the grill over direct heat, then let it cook for about 6-9 minutes per side depending on the thickness of your chicken. The goal is an internal temperature of 165 degrees. But honestly, even if you overcook it (which I tend to do), we’ve tenderized the chicken enough during the marinade massage that it remains tender and juicy.

Once your chicken is cooked through, transfer to a clean plate or serving platter, and allow it to rest for 10 minutes before slicing in and enjoying. And let me tell you, this might just be the most delicious chicken you’ll ever eat. It’s SO FLAVORFUL. It’s savory. It’s a little spicy. There’s something magical that happens when that flame meets the Old Bay. Absolutely delish!

Serves: 4 Print
Ingredients:
1- 1 ½ lbs chicken breasts (2-3 large breasts)
¼ cup avocado oil, plus more for brushing
2 tbsp Old Bay seasoning
½ tbsp garlic powder
½ tbsp honey
Directions:
To a gallon sized ziptop baggie, add ¼ cup avocado oil, Old Bay, garlic powder, and honey. Zhush marinade around in the bag to mix. Add the chicken to the bag, let the air out, and zip it closed. Gently massage the marinade into the chicken for 5 minutes straight, making sure to flip around the chicken in the bag as necessary so it’s fully coated. Leave the chicken in the bag while you light the grill.
Preheat the grill over medium high (around 400-450 degrees). Brush a little avocado oil on the grill grates. Arrange the chicken in a single layer. Close the grill, and cook for 6-9 mins per side (depending on the thickness of the chicken) until the internal temperature equals 165 degrees.
Allow chicken to rest for 10 minutes before slicing. Enjoy!
