Breakfast Burritos

I am totally setting you guys up for success next week and for weeks to come!

Ok, so breakfast is the most important meal of the day, right?

At least, that’s what the grownups say.

Well, I’m making sure we can have an easy, fast, filling, delicious breakfast whenever we want!

I love breakfast food. I’m sure you guys have been able to figure that out by now. But honestly, I never used to be great about eating breakfast during the week. I never could seem to find the time to pack myself breakfast AND lunch. So, I’d end up grabbing a pack of crackers or a candy bar to hold me over til lunch. Or even worse, I’d just eat nothing til lunch, and then totally binge and eat my face off at lunch time.

Oh, those were my young and dumb days…

Now, I make sure to eat breakfast every day. But, I’m still not putting a lot of effort in to breakfast. So, I know I’ve told you this before, but I eat the same thing for breakfast every day during the work week. Greek yogurt and a banana. Yogurt and banana. Day after day after day…

And sometimes, I forfeit the banana. BORING!

But, no more! I’ve got us covered on the no effort breakfast part.

Well, it requires a little effort. But, just one time. Not every morning.

Today, we’re having Breakfast Burritos!

These breakfast burritos remind me of one of our old drivers from work. Every pay Friday, he would go to McDonald’s and buy a gazillion $1 breakfast burritos. And then, he’d have packets of picante sauce on the side for you to add. He’d walk around our administrative office handing out burritos and picante sauce to his favorite people. Even if you politely declined, you still got one. I used to always be there picking up paychecks for my team, and I guess he liked me enough to give me one too. When he didn’t see me at the admin office, he’d drive over to my office (about 10 mins away) just to give me my pay Friday breakfast burrito!

So, here’s the plan on our breakfast Breakfast Burritos. You can eat them fresh the day you make them. OR, you can make them ahead, store them in the freezer, and reheat them when you’re good and ready.

These burritos are pretty simple to put together. We’re going to mimic some of the flavors of the McDonald’s burrito, but in a much healthier (and cheaper) way. We start by making a big batch of scrambled eggs. But, to make our eggs extra special, we add some prepared salsa and pepperjack cheese. The salsa and cheese give our eggs tons of flavor without needing a ton of extra ingredients.

To make these burritos even heartier, we add some breakfast sausage to the party. You can actually use whatever kind of sausage you prefer: original, hot, sweet, turkey, etc. I’m not sure I’d use maple though. That might be a little weird. Even though I love me some maple sausage.

If you’re eating these fresh, I totally recommend adding a couple of fresh slices of avocado. It adds a really nice creaminess and freshness to these burritos. However, if you’re freezing these for later, skip the avocado. The avocado loses some of its flavor and gets a little mushy when it’s frozen and reheated. It doesn’t add the same value when it’s frozen.

Reheating these for breakfast on the go couldn’t be easier. Remove from freezer. Microwave for 2 minutes. Devour! No more boring breakfasts. And, definitely no more skipping breakfast!

But if you’re eating these fresh for weekend breakfast, day off breakfast, vacation breakfast, whatever…I might even recommend popping these in the oven for a couple of minutes after you assemble them to get a little crisp on the edges. That’s what I like to do, but it’s totally not a necessary step.

And, since this recipe makes enough to feed 8, these are perfect to tuck away in the freezer and serve for a crowd, eliminating the need to cook while you’re entertaining.

Plus, you know I’ll always support breakfast for dinner. That’s certainly how I enjoy these best!

Breakfast Burritos

Serves: 8 Print

Ingredients:

  • 8 oz sausage, cooked and crumbled

  • 8 eggs

  • 1/3 cup prepared salsa

  • ½ cup pepperjack cheese, shredded

  • ½ tsp salt

  • ¼ tsp pepper

  • 8 8-inch flour tortillas

  • ½ avocado, sliced (optional)

  • cooking spray

Directions:

  1. In a medium mixing bowl, add eggs, salsa, salt, and pepper. Whisk or beat with a fork to combine. Stir in pepperjack cheese.

  2. Heat a large skillet over medium high heat. Spray pan with cooking spray. Add egg mixture, and cook for 6-8 minutes, stirring occasionally, to scramble the eggs. Set aside.

  3. Take 1 tortilla, and spoon about ¼ cup of eggs, about 1 tbsp of sausage, and 1-2 slices of avocado, if desired, in the center of the tortilla. Fold the left and right sides over the filling. While holding the sides in place, fold over the bottom (side closest to you) over the filling, and roll the tortilla in to a burrito. Serve!

  4. To make freezer burritos, cool all ingredients before filling and rolling the burrito. Wrap each burrito individually in wax paper, and place in a freezer safe bag. To reheat, leave burrito in the wax paper or wrap in a paper towel and microwave for 2 minutes until heated all the way through.

Recipe notes:

*You can control the spice level of these by choosing your favorite heat level of salsa.

*You can be flexible with your sausage choice. Pork or turkey sausage will work. You can also use original or hot sausage. Your choice!

*Skip the avocado if you're freezing these. It's not quite the same frozen.
