Everything Breakfast Burger

It’s no secret that I have a breakfast obsession.

More than half the recipes we make here are breakfast or brunch meals. And, I’ve never heard one of you complain about that, so we must be doing something right!

There is just nothing better in my opinion. You can do SOOO MUCH with breakfast foods. You can go savory. You can go sweet. You can have all the eggs, bacon, and sausage and really protein it up. Or, you can keep things strictly produce based by making a smoothie. And bonus, you can eat breakfast foods for any meal and nobody will judge you!

I mean think about it. People wanted to eat breakfast foods for lunch, so they gave it a fancy name, designated it as a trend, and now we have brunch. Or, if you’re feeling like waffles and bacon for dinner, you say you’re having breakfast for dinner tonight.

Breakfast is just amazing enough to pull that off. Because, it definitely doesn’t work the other way. If I said I wanted roast chicken and potatoes for breakfast, dinner for breakfast if you will, people would look at me like I was nutty. But, if I say I’m having pancakes and eggs for dinner, people applaud and then drool all over me.

Now, sometimes things get crazy and worlds collide. Defined meals get blurred. And, the results are usually more outstanding than anyone could ever imagine. That’s what’s happening with today’s recipe. It’s not breakfast FOR dinner. It’s breakfast PLUS dinner.

So today, we’re making Everything Breakfast Burgers!

You guys don’t even know what you’re about to eat! There are a lot of different components to this sandwich. We’re basically making each layer from scratch. But, I PROMISE you that it’s worth the effort.

Let’s start with our everything bagel bun. We’re going to use my 2 Ingredient Dough Bagel recipe to make some everything bagels. They’re much faster and easier to make than traditional bagels, plus they’re a little bit healthier. So for these we only need some Greek yogurt, self rising flour, egg wash, and everything bagel seasoning. Mix. Bake. DONE.

You can’t have a breakfast burger without bacon, but we’re going to up the ante on ours by making a maple candied bacon. We’re going to bake the bacon in the oven at the same temperature that we baked the bagels, so the good news is that you can have things going in the oven while you’re working on other components. The bacon is simple, but you have to babysit it a little bit once you pass a certain point. We’re going to brush our bacon with real maple syrup, sprinkle it with a little brown sugar and black pepper, and bake it on a rack placed over a sheet pan until it’s caramelized and crispy. But, since bacon comes in a variety of thicknesses and sizes, there’s going to be some major variation on the cook times. Once you hit that 15 minute point in the oven, keep checking it every few mins. The bacon can go from undercooked to burned in a blink of an eye.

The rest of the fillings for our burger are pretty standard. We’re going to keep our burger meat simple by seasoning it with only salt and pepper so that the other flavors of the burger can really shine. Pan fry it until it’s caramelized on the outside and juicy on the inside, throw a slice of cheddar on top to get nice and melty, and the burgers are done. We can also use that same pan to fry up our runny eggs for our burgers with only just a quick wipe down of the pan.

Then once we’re ready to assemble, we’re going to load up our bagels with the bacon, burger, and egg alongside some greens, tomatoes, and avocado. The fresh veggies help to cut all the fatty richness that the egg, beef, and cheese provide. But let me tell you. This sandwich is a real jawbreaker. Look at the height once everything is piled up high!

On top of giving your jaw an exercise, this sammie is sure to keep you plenty full for a hot minute. It’s loaded with protein, loaded with fillings, and loaded with absolute deliciousness. It’s sweet and savory and rich and fresh and ooey and gooey and everything you could want out of the ultimate sandwich.

Ok, everyone! Though we’re outdone ourselves a little bit here today, do not expect the breakfast recipes to slow down any time soon.

Everything Breakfast Burgers

Serves: 4 Print

Ingredients:

For the Maple Candied Bacon:

  • 4 slices bacon

  • 1 tbsp maple syrup

  • 1 tbsp brown sugar

  • 1/8 tsp pepper

  • cooking spray

For the 2 Ingredient Dough Everything Bagels:

  • 1 cup self rising flour, plus more for dusting

  • 1 cup non-fat plain greek yogurt

  • 1 egg, well beaten

  • 1 tbsp everything bagel seasoning

  • olive oil cooking spray

For the Burger:

  • 1 lb ground beef (I used 80/20)

  • 1 tsp salt

  • ¼ tsp pepper

  • 4 slices cheddar cheese

  • 4 fried eggs

  • 1 avocado, thinly sliced

  • 1 roma tomato, thinly sliced

  • 1 cup baby mixed greens

  • canola oil

Directions:

  1. Make the Candied Bacon: Preheat oven to 375 degrees. Line a baking tray with aluminum foil, and top with a wire baking rack that's been lightly sprayed with cooking spray. Arrange bacon in a single layer on the baking rack. Brush each slice with maple syrup, and top with brown sugar by gently patting it down and spreading it with your fingers over the bacon. Sprinkle with pepper. Bake for 15-25 minutes until the bacon is mostly crispy and the sugar has caramelized. Carefully remove bacon to a parchment lined plate. When cool to the touch, break the bacon in half. Set aside.

  2. Make the everything bagels: Keep the oven at 375 degrees. Line a baking sheet with parchment paper. Lightly spray with olive oil cooking spray. Set aside.

  3. To a mixing bowl, add flour and yogurt. Mix with a spoon until ingredients start to come together, then use your hands to fully combine the mix and form a dough. (It will be a little tacky.) Dust a clean surface with flour. Turn the dough out on to the floured surface, and move it around in the flour to help reduce some of the stickiness of the dough. Knead the dough two times, turn the dough a quarter of a turn, and repeat until you've kneaded the dough 16 times total. Divide the dough into 4 equal portions. Take one portion of dough, and roll it into a rope shape approximately 5 inches long. Form the rope into a bagel shaped circle, pinching the ends to seal. Place on prepared baking sheet. Repeat with remaining dough.

  4. Brush the tops of the bagels with egg wash. Top with everything bagel seasoning. Bake for 25-26 mins until the tops are golden brown. Remove from oven, and allow to cool for at least 5 minutes before cutting in half. Set aside.

  5. Meanwhile, make the burger patties: Divide ground beef in to 4 mounds. Shape beef into roughly 4 inch patties. Season the top side of each patty with half of the salt and pepper. Heat a drizzle of canola oil in a large nonstick skillet over medium high heat. Add burger patties, seasoned side down, to the pan. Season the other side of the beef with remaining salt and pepper. Cook patties for 4-5 mins per side until fully cooked through. In the last minute of cooking, top each patty with 1 slice of cheese. Remove from the pan to a paper towel lined plate to drain any excess grease.

  6. Assemble the burgers: Layer mixed greens, tomato slices, avocado slices, 1 burger, 2 halves of candied bacon, and 1 egg on to the bottom half of each bagel. Top with each bagel top. Serve!

Recipe notes:

*You could certainly cheat and use store bought everything bagels, but why? These are so easy to make and SOOO much better for us!

*I generally use a lower fat content beef, but we want a nice, juicy, flavorful, beef for this burger. That's why I went for an 80/20 mix ground chuck. MMMMM!

*To easily fry an egg, heat 1 tbsp of butter over medium high heat. When the butter starts to foam and sizzle, crack eggs into the pan. Top with a pinch of salt and pepper. Cook until the whites are set but the yolk is still runny, about 2-3 mins. I chose to leave mine as a gooey egg, but you could break the yolk so you don't have a runny egg.

*No two pieces of bacon are cut the same, the cooking time is going to widely vary here. This bacon goes from flimsy to burnt FAST. Start checking your bacon to see if it looks nice and caramelized at 15 minutes, and check it every 2-3 mins from there. I used a thick cut bacon this time, and mine took about 28 minutes. The thickness of the bacon doesn't impact the deliciousness of the burger, but just make sure you don't walk away too long while it's baking.
