Today, we’re making Snickerdoodle Muddy Buddies!

It’s Day 11 in our 12 days of treats series, and today we’re making a treat that traditionally uses chocolate and peanut butter but swapping it for cinnamon sugar. These little bites are like winter in a bowl!
We’re going to start by measuring out some chex cereal and tossing it in a large bowl. I prefer to use rice chex for this one, but you could use a different option if you’d like. The sweet cinnamon flavor can stand up to a few different cereal choices!

We’ll set the cereal aside for a sec while we work on our coating. To a bowl, we’re going to add some white chocolate chips and a little bit of butter. We’re going to pop those in the microwave for just a few seconds until the white chocolate is completely melted. Then, we’re going to stir in some cinnamon. When you first start stirring, it may look like something has gone wrong. But just keep stir, stir, stirring. The chocolate mixture will smooth itself right back out all while having beautiful speckles from the cinnamon.
Once our white chocolate mixture is ready, we’re going to pour that over the cereal, and toss gently until the cereal is completely coated. Then, we’ll transfer the cereal mix to a large ziptop baggie to prepare it for the last step.

The last thing we need to do is coat the cereal in more cinnamon goodness, so we’ll add in some powdered sugar and a little more ground cinnamon. Seal the baggie making sure to leave plenty of air in the bag. Then shake, shake, shake until the cereal is completely coated in all that snowy goodness. Spread the coated cereal onto a parchment lined baking sheet to dry, and that’s all there is to it!

This treat is so simple, so cozy, and the definition of a winter treat in my opinion. From the snowy powdered sugar to the warming cinnamon highlights to the buttery white chocolate undertones, this treat captures the essence of the season perfectly.

Snickerdoodle Muddy Buddies
Serves: 5 cups Print
Ingredients:
5 cups Chex (I use rice)
1 ½ cup white chocolate chips
1 tbsp unsalted butter
½ tbsp + 2 tsp ground cinnamon, divided
1 cup powdered sugar
Directions:
Add cereal to a large bowl. Set aside.
To a microwave safe bowl, add chocolate chips and butter. Microwave for 1 minute, and stir well until completely melted and smooth. Add ½ tbsp cinnamon, and stir until completely combined.
Pour chocolate mixture over the cereal. Toss gently until completely coated in the mix. Transfer mix to a large gallon zip top bag. Add powdered sugar and 2 tsp cinnamon. Seal the bag without releasing the air in the bag. Shake vigorously until the cereal is completely coated.
Transfer cereal to a wax paper lined baking sheet, and spread out into a single layer. Allow to dry for 30 minutes. Store in an airtight container, and enjoy!

*I used rice chex because that’s what I had, but you can use any other plain flavored variety for this.
