Graham Cracker Granola- By adding graham crackers to the mix, simple granola becomes a dessert like treat.

Today, we’re making Graham Cracker Granola!

 


Consider today’s recipe part 1 of a 2 part series. And trust me, you’re going to want to stick around for part 2!

 

I’m currently trying to get my life right, which for me means I’m trying my best to stay away from my favorite sweets…cookies, cakes, chocolate…the good stuff. But in turn, I’ve found a new mission in life to turn things like yogurt and cottage cheese into a dessert like treat. And you know what? I think I’m doing a pretty darn good job of it!

 


For part two of this series, we’re turning Greek yogurt into a banana pudding inspired parfait. But to do that, I really wanted a granola that could mimic the vanilla cookie aspect of banana pudding without having to use actual cookies. As the wheels started churning away in my brain, I thought about what I could use that was crunchy, kinda sweet, and cookie like. And that’s when the lightbulb went off.

 

Graham crackers!

 


This granola comes together so simply with just a handful of ingredients. And it starts with some melted butter, honey, and vanilla. Now, you could totally opt for a different liquid fat here: coconut oil, olive oil, a completely neutral oil. But since I was going for cookie vibes, a tiny bit of butter never hurt anyone.

 

We’ll mix the wet ingredients together until they’re just combined. Then, we add in the oats and graham crackers. We need to use old fashioned oats for this (sometimes called rolled oats), so make sure you grab the right kind. We’re also going to crush up a couple sheets of honey graham crackers until the crumbs are roughly the same size as the oats. It doesn’t have to be perfect; we just don’t want jumbo chunks of graham cracker in our granola.

 


From there, we’ll season the mix with a tiny pinch of salt, mix it all together until the dry ingredients are coated in the butter mix, then spread the mixture out on a baking sheet. The granola only needs to bake for about 20 mins. Then, we’ll allow it to cool completely before we dig in!

 


Once you pair this granola with some yogurt and fruit, it really does give cookie vibes. It’s perfectly sweet without being too sweet. It’s soooo crunchy and satisfying. And, it’s super versatile. So far, I haven’t found anything that it doesn’t taste great with!

 

Mmm I’m currently imagining sprinkling some mini chocolate chips into this granola, and duh why didn’t I think of that sooner???

Graham Cracker Granola

Serves: 1 cup          Print


Ingredients:

  • 1 ½ tbsp unsalted butter, melted

  • 1 ½ tbsp honey

  • ¼ tsp vanilla extract

  • Salt, to taste

  • ½ cup old fashioned oats (or rolled oats)

  • 2 sheets honey graham cracker, crushed (about ½ cup)


Directions:

  1. Preheat oven to 300 degrees. Line a baking sheet with parchment paper.

  2. Add butter, honey, and vanilla to a bowl, and mix well to combine. Add in oats, graham crackers, and a pinch of salt. Mix well until completely combined.

  3. Spread oat mixture into a single layer on prepared baking sheet. Bake for 15 mins, toss, then back in the oven for another 5-7 mins until the mixture is lightly golden.

  4. Allow mixture to cool completely before storing in an airtight container. Enjoy!


Recipe notes:

*Old fashioned oats are sometimes called rolled oats. That’s what we need for this recipe. Do not get quick oats or some other variation.

*I like to put the graham crackers in a sandwich baggie, and crush them in my hands. We don’t need them to be fine crumbs, just nice little bite sized pieces.
