Pina Colada Spritz- A simple 3 ingredient cocktail that will make you feel instantly transported to tropical paradise.

I feel like I’m giving fall the wrong idea.


I’m not intentionally leading it on or giving it mixed signals. So let me officially declare that I want it to be summer forever.

But, I’ve kinda been engaging in fall themed purchases. I ordered some Hocus Pocus 2 themed candles. I ordered a 13 days of pumpkin beer fun pack from a local restaurant. I even accidentally thought about curling up with a fuzzy blanket and drinking hot chocolate the other night.

I do not want fall to think that we’re friends now. Because, WE ARE NOT.


And I definitely don’t want fall to think it’s ok to come on over.

So to keep the summer vibes alive, we’re making a super simple cocktail that screams sunshine and beaches.

Today, we’re making a Pina Colada Spritz!


This super simple cocktail is only 3 ingredients. But, those 3 ingredients mix together to instantly transport you to tropical paradise. And when we’re clinching on to what’s left of summer, tropical paradise inspired anything feels like the right move.

So, let’s get to it!


There’s really not much to talk about here as far as method. It’s literally a dump and go recipe. We only need some pineapple juice, some coconut rum, and some fizzy water. And, that’s our drink! Mix it together, throw on a straw hat and sunglasses, and that’s that!


The key here for me with this drink is making sure everything is nice and cold. It’s funny, but I seem to go through ice phases in my life. There was a time when I had to have my glass stuffed to the brim with ice, and I’d gnaw on that ice like there was no tomorrow. Then for the past few years, I haven’t even added ice to my water (which I drink all day long). Now recently, I’m starting to get back into iced drinks. Isn’t that odd? Either way, we definitely want some ice in our glass for this one. We also want to make sure our pineapple juice and sparkling water are chilled too.


As far as the pineapple to coconut ratio, I like to go a little heavier on the pineapple…kind of a 2-1 pineapple to coconut blend. It’s also important to make sure you’re using pure pineapple juice and not a mix loaded with sugar. The natural sweetness in the pineapple is the only sweetness we need here.


When it comes to the sparkling water, I like to get some extra bang for my buck by using a lime flavored sparkling water. Topo Chico is my favorite to use right now. And you can even be flexible with how much you want to use depending on how light and bubbly you like your drink. Since the sparkling water is more of a finishing element to this drink, that little kiss of lime adds a lovely contrast to the drink.


This drink is everything it promises to be…tropical and refreshing. The balance of pineapple, coconut, and those lime undertones truly make you feel like you’re soaking up all the rays on a white sand beach. And those fizzy bubbles from the sparkling water make this drink feel so nice and light. It’s actually a little dangerous, so please drink responsibly!

Pina Colada Spritz

Serves: 1 Print


Ingredients:

  • 4 oz pineapple juice, chilled

  • 2 oz coconut rum

  • 4 oz sparkling water with lime, chilled (I used Topo Chico)

  • Lime slices, for garnish


Directions:

  1. Add pineapple juice, rum, and Topo Chico to a glass filled with ice. Stir gently to mix. Garnish with lime slices. Enjoy!
