Chocolate Dipped Oreos with Crushed Kettle Chips

Today, we’re celebrating the return of the potato chip!

Let me explain…this year for Lent, I decided to give up potato chips. I’ve never given up anything for Lent before, but this year it seemed right. I’ve been working on rebuilding the path of my faithful journey, so I wanted to make sure I understood the sacrifice that we reflect upon during the Lenten season. Potato chips may seem insignificant in comparison; but you have to crawl before you walk, right?

Now, I’m definitely the person that craves salty things before sweet things. And plain kettle chips pretty much make my world go round. I had to make a real effort not to dive face first in to a bag of chips the second the clock struck midnight on Easter. In fact, I actually made sure I didn't have any chips in the house for that exact reason.

I’m not proud of this, but I find myself shoving potato chips in my face at all hours of the day. It could be 5am or 11pm. When the craving strikes, I’m weak to its power. I’m a minimalist when it comes to chips…original flavor is what I want. I’m not going to snub my nose at a sour cream and cheddar or a BBQ chip, but my go to is always the original. And these days, I pretty much only eat kettle chips. I think they’re supposed to be healthier right? Yeah…let’s go with that.

While we’re being honest, I have another confession to make. As much as I love stuffing my face with kettle chips, I REALLY love shoving a kettle chip in my mouth and then chasing it with an Oreo. It’s got to be a thin Oreo though. You know…ratios, people.

This heavenly combo might sound a little weird. Of all the things you can dip or mix a potato chip with, Oreos probably don’t seem like they should be at the top of the list. But I’m telling you, it’s amazing. A-MAZ-ING! Have you ever had a potato chip dipped in chocolate? It’s kind of the same concept, but better (I think).

So, that’s what we’re doing today. We’re double dipping. We’re getting the best of both worlds. We’re mixing salty and sweet. And, it’s most likely going to change your life. I’ve always had a salty tooth…popcorn, chips, pretzels, tortilla chips, the salt on a margarita rim…that’s what I’m talking about. But, mix salty and sweet together, and I’m pretty much done for.

I wanted to figure out a way to keep the chips and Oreos together in a way that didn’t involve over-stuffing my mouth. And that’s when I remembered the best food glue there ever was…melted chocolate. You get the whole shebang of cookie, cream, chocolate, and potato chip in every bite. And, these cookies look pretty darn cute too! Yay for icing on the cake! (Or chocolate on the potato chip…)

This recipe couldn’t be any easier. There are only 3 ingredients, and the hardest part about this recipe is waiting for the chocolate to set so you can eat the cookies without getting chocolate all over yourself and others. We dip the Oreos in melted chocolate, and we immediately sprinkle them with crushed potato chips. THAT’S IT! We have the best thing to ever happen to a potato chip or an Oreo.

Like I said, thin Oreos are the way to go here. You don’t want the chocolate to overpower the potato chips. You want them to complement each other. I also use kettle chips here, because that’s what I like. Regular chips would be just as yummy. Actually, just to give you one last piece of cold hard truth, I use the reduced fat 40% less calories kettle chips. Gotta save those calories wherever you can!

I hope you love these cookies as much as I do. Maybe Oreo’s next “special” flavor should be potato chip!

Chocolate Dipped Oreos with Crushed Kettle Chips

Serves: about 40 cookies Print

Ingredients:

  • 1 pack Oreos Thins

  • 16 oz milk chocolate candy melts

  • 1 ½ cups plain kettle chips crumbs (about 3-4 cups chips, crushed)

Directions:

  1. Melt the chocolate candy melts in a microwave safe bowl according to package directions.

  2. Line a large tray or baking sheet with waxed paper. Dip 1 cookie at a time in to the melted chocolate, turning with a fork to make sure the cookie is completely covered. Let excess chocolate drip off of cookie, and place on the lined baking sheet. Top each cookie with 1 tsp kettle chip crumbs, lightly pressing to adhere the crumbs to the chocolate.

  1. Repeat until all cookies have been dipped. Enjoy!

Recipe notes:

*I like to use chocolate candy melts for this instead of melted chocolate. I find that candy melts are a little thinner when melted and easier to dip the cookies in. I get my candy melts from the craft store, but Walmart sells them too. Feel free to use real melted chocolate for these!

*It’s all about utilizing the surface area when it comes to these cookies. The more chip crumbs that touch the chocolate, the more chip crumbs that will stick to the cookie, remember that.

*We want the chip crumbs to have some texture to them. I like to put mine in a freezer bag, and beat them with a hammer. It’s therapeutic! You can also run them through a food processor if you don’t have any aggression to release, just don’t take it too far.

*Remember, 40% off fat free calorie free and all that jazz for your potato chips…lol! Regular chips will work here if kettle chips aren’t for you, they just won’t be as crispy crunchy.
