Today, we’re making 2 Ingredient Butterscotch Fudge!

It’s Day 7 in our 12 days of treats series, and today’s recipe will turn you into a master candy maker. And all you need it 2 very basic grocery store ingredients.

For this recipe, we need two simple ingredients: butterscotch chips and canned vanilla frosting. That’s it!

We’re going to start by melting the butterscotch chips in a large bowl until they’re completely smooth with no lumps. We’ll follow the same method we’ve been using throughout the whole series…microwave in 15-30 second intervals, and give everything a generous stir in between each round in the microwave. It’s so simple!

Next, we’re going to take a can of store bought vanilla frosting and microwave that too. We can microwave the frosting right in the container it comes in. Just be sure you peel ALL the foil off the container first! We only need to microwave the frosting for about a minute. We want to loosen it up so that it’s mostly pourable, but we don’t want to zap it for so long that the frosting starts to separate. If your microwave runs hot, start checking it at about 30 seconds. It’s ok if some of the frosting is not melted…we just need it mostly melted.

Then, we’ll pour the frosting into the bowl with the melted chips, give it a good mix, and that’s it for our fudge base. Spread the mixture evenly into a parchment lined baking dish, and to the fridge it goes to set.

Now, this third ingredient is totally optional but highly recommended. Before I pop the fudge in the fridge to set, I like to sprinkle the top with some flaky salt. This fudge is super sweet, so I like to balance that out a little bit with a salty sprinkle on top. And speaking of sprinkles, I’m not going to stop you if you want to add some of those on top too!

We’ll let the fudge set in the fridge for a couple hours, and our work here is done. Pull it out of the fridge, cut it into squares, and be amazed at how absolutely perfect the texture of this fudge is.

This treat is soooo sweet with the perfect backdrop of caramely goodness. The texture is soft and, well, fudgy. The little sprinkle of salt adds some contrast to all the sweetness. And, these little squares of candy are just so nostalgic. This reminds me of my childhood, and I can’t think of anything better at Christmas time.

Ok, everyone. Next up in the series might just be my favorite one of all 12 days. So, stay tuned!

In the meantime, enjoy! And, let’s eat!

2 Ingredient Butterscotch Fudge

Serves: 20          Print

Ingredients:

  • 1 bag (11 oz) butterscotch chips

  • 1 can (16 oz) vanilla frosting

  • Flaky salt, to taste

Directions:

  1. Line an 8 x 8 baking dish with parchment paper. Set aside.

  2. Add butterscotch chips to a large microwave safe bowl. Microwave in 15-30 seconds intervals, stirring well in between each interval, until completely melted. Set aside.

  3. Remove lid and all foil from the frosting can. Place in the microwave for 1 minute until mostly melted. Add melted frosting to the bowl with the butterscotch, and mix until completely combined.

  4. Transfer mixture to prepared baking dish, and spread out into an even layer. Sprinkle the top with a pinch of flaky salt. Transfer to the fridge for 2 hours to set.

  5. Lift parchment out of the baking dish to easily cut the fudge into 20 pieces. Allow to come back to room temperature before storing in an airtight container. Enjoy!

Recipe notes:

*Make sure you get all the foil off of the frosting can before adding it to the microwave, or you’ll see fireworks (and not the good kind)!

*This simple fudge trick works with other flavors of chips too!
