You know your girl loves to eat her greens.



I know I love to eat my greens.


But sometimes, I don't even realize how many green things I consume at once until I go to take a picture of it and there's only one color in the frame.



I was working on a fridge clean out dinner the other night, and I was kind of pre-building the idea in my head. So, I knew I had some fish I wanted to use for tacos. And then, I start think about how I need some avocado in there. Then, I'm think of making some kind of kale slaw. Then, I see the green hot sauce in my pantry, and I think I need that and some salsa verde too.



And the next thing I know, I've built yet another completely green meal.


At one point, you just gotta roll with it. So I added some green onions to finish the tacos, and that was that!



It's no secret that I have a personal mission to share my love of greens with you guys, especially a super hated green...brussels sprouts. So, I have another recipe today that will be sure to sway you.


Today, we're making BBQ Roasted Brussels Sprouts with Mustard Aioli!



These brussels sprouts are great for a side dish, great for an appetizer, or great as an afternoon snack. And, they're super simple! We're going to roast some sprouts that have been coated in a homemade BBQ spice mix, then serve them alongside the dreamiest mustard aioli. And, that's it!



Let's start with e BBQ spice rub. We're going to dig through the pantry to pull together some spices that you probably already have on hand to make a sweet and spicy BBQ rub. So, we'll use some brown sugar for sweetness. We'll use some garlic powder, onion powder, salt, and pepper for flavor. We'll use some paprika and smoked paprika for a smoky element. And, we'll use some chili powder and cayenne pepper for a little heat. Mix all of the spices together, and get ready to toss our veggies in it.



To prepare our brussels sprouts, we'll trim the little nubbins off the ends, and slice them in half lengthwise. Then, we'll add them to a mixing bowl along with some olive oil and our bbq spice mix; and give them a good toss until they're fully coated in that dreamy seasoning. Then we'll spread them on a sheet pan, and to the oven they go until they're golden and slightly crisp.



Now, the cooking time on the sprouts will depend on the size of your veggies. If they're on the smaller side, they'll only take about 20 mins to cook. If they're a little larger, it will be closer to 30 mins. Just make sure you watch them closely, because we don't want them to burn.



While the veggies are roasting, we can work on our dipping sauce. This mustard aioli has become my latest obsession, and I'm putting it on basically everything these days. It's sooooo rich, tangy, and flavorful! And, it's just as simple as mixing some mayonnaise, some stone ground mustard, some garlic powder, and a pinch of black pepper. Stir it together, and get ready to fall in love.



To serve, we'll transfer our veggies to a platter; and make sure that aioli is close by. The brussels sprouts are a little sweet from the sugar with a little hint of spiciness in the background thanks to the cayenne and chili powder. Then, that aioli comes in with a cooling creaminess with a hint of tang from the mustard. It's such a beautifully harmonious pairing!


Like I said, my intention was to serve these as a side dish to any standard entree. But in reality, I found myself pulling them from the fridge and eating them as a snack. They'd also work really well as an appetizer served alongside some cute toothpicks. It really doesn't matter how you serve them, because they are too darn delicious!

BBQ Roasted Brussels Sprouts with Mustard Aioli

Serves: 4 Print


Ingredients:

For the BBQ Roasted Brussels Sprouts:

  • 1 lb brussels sprouts, trimmed and cut in half lengthwise

  • 2 ½ tbsp olive oil

  • 1 tbsp brown sugar

  • 1 tsp paprika

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp smoked paprika

  • ½ tsp salt

  • ½ tsp pepper

  • ¼ tsp chili powder

  • 1/8 tsp cayenne


For the Mustard Aioli:

  • ½ cup mayonnaise

  • 1 ½ tbsp stone ground mustard

  • ¼ tsp garlic powder

  • pepper, to taste


Directions:

  1. Make the Mustard Aioli: To a small mixing bowl, add mayonnaise, mustard, garlic powder, and a pinch of pepper. Stir well to combine. Set aside in the fridge.

  2. Prepare the Brussels Sprouts: Preheat oven to 400 degrees. To a small mixing bowl, add brown sugar, both paprikas, garlic powder, onion powder, salt, pepper, chili powder, and cayenne. Mix well to combine. Place brussels sprouts in a large mixing bowl along with olive oil and spice mix. Toss gently to coat completely.

  3. Arrange brussels sprouts cut side down on the prepared baking sheet, and place in the oven for 20-30 mins, tossing half way through the cooking time, until the brussels sprouts are golden brown.

  4. To serve, transfer brussels sprouts to a serving dish. Serve with mustard aioli. Enjoy!

Recipe notes:

*The amount of time it takes for your brussels to roast will depend on their size. My brussels sprouts were pretty small, so they only took about 20 minutes total. Check them at 20 mins, and check them every few mins after until they're golden but not burnt.

*Make sure your brussels sprouts are nice and dry before you roast them. We want them to get crispy, not be soggy.
