Creamy Feta Chicken Salad- Rotisserie chicken is mixed with my creamy feta dressing for a delicious new twist on classic chicken salad.

Today, we’re making Creamy Feta Chicken Salad!

The story of how today’s recipe came about is as great a display of how my brain works as any. One evening, I was thinking about how I was really craving tuna salad when at the exact same moment, I caught a glimpse of the big ol’ pack of feta I had in my fridge. Well apparently, some wires got crossed in my brain; because suddenly I was obsessively thinking about a feta tuna salad situation.

Now if you know anything about me, I’m a tuna salad minimalist…mayo, onion, celery…that’s it. So that fact that I was even considering mixing anything but those three items into my tuna salad was a major deal. So, I happened to be telling this story to a friend of mine. And the first thing she said to me was “I don’t know about tuna, but I bet that’d make a great chicken salad”. DUH, of course that would make a great chicken salad!

 

So, here we are.

We’re going to start by making a modified version of my creamy feta dressing. This has become a fan favorite lately by myself and my loved ones, and that’s exact what I was thinking about when I imagined the base of this salad.

So, we’ll start with equal parts nonfat plain Greek yogurt and mayo. Then, we’ll season that mixture with some Greek seasoning, a little red wine vinegar, some garlic powder, a splash of olive oil, and a little salt and pepper. Finally, we’ll crumble in a little but of feta cheese. And, we’ll give it all a good mix. Now, we’re not going to blend this like we normally would when we’re making the salad dressing. So, you want to really crumble that feta yourself as best you can. That way, it’ll melt right into the dressing.

From here, we’ll mix in some shredded rotisserie chicken, some seeded diced cucumber, and a little minced shallot. That’s it! The cucumber plays the role that celery would typically play in a chicken salad while shallot plays the role of onion. These two simple swaps really help us double down on the Mediterranean vibes going on in this chicken salad. And when it comes to the rotisserie chicken, I use a mix of dark and light meat in no particular ratio. But, use what you like!

I like to let this chicken salad sit in the fridge for about an hour before serving so those flavors can really infuse together. And then, it’s time to serve! I really love this chicken salad either served with some nice crispy pita chips or stuffed into a beautiful lettuce wrap. The crispy crunchy texture of both options really adds some nice dimension to this chicken salad. But, it’s also great on nice, toasty, whole grain bread too.

This chicken salad is bursting with flavor. It’s tangy. It’s savory. It’s herby. And, it’s oh so delicious. This one is such a fun and simple way to add a little extra flare and pizazz to an otherwise fairly simple lunch item.

Creamy Feta Chicken Salad

Serves: 4          Print


Ingredients:

  • 2 tbsp mayonnaise 

  • 2 tbsp nonfat plain Greek yogurt 

  • 2 tbsp crumbled feta

  • 1 tsp Greek seasoning

  • 1 tsp red wine vinegar 

  • 1 tsp olive oil

  • 1/8 tsp garlic powder

  • 1/8 tsp salt 

  • 1/8 tsp pepper

  • 1 ½ cups shredded rotisserie chicken

  • 1 mini cucumber, seeded and diced (about ½ cup)

  • ½ shallot, minced (about 2 tbsp)

  • Bibb lettuce or pita chips, for serving


Directions:

  1. Add mayo, Greek yogurt, feta, Greek seasoning, red wine vinegar, olive oil, garlic powder, salt, and pepper to a mixing bowl. Mix well to combine.

  2. Add chicken, cucumber, and shallot; and mix well to combine. Refrigerate for 1 hour.

  3. To serve, scoop chicken salad into lettuce cups, or serve with pita chips for dipping. Enjoy!

Recipe notes:

*I love this chicken salad equally in lettuce cups or with crackers. But, it’s also delish on a traditional sandwich with some spinach arugula mix and tomato slices. This one is very versatile!

*I recommend buying a block of feta and crumbling it yourself. The flavor and texture are both way better than pre-crumbled feta.
