Today, we’re making Cranberry Feta Pinwheels!

 



Welcome to the 2024 Small Batch Holiday Cooking series! I’ve been doing this for a couple years now on my social media platforms, and one of my most popular requests is to have the recipes available on the blog. So, here we are! We have EIGHT brand new recipes coming, and 6 of them will be featured right here on the blog!

 



This series started as a spinoff of my Cooking for One series, and it became very popular amongst so many groups of people…singles, empty nesters, people with complicated families, people going through bad breakups. It’s not only been an alternative way for people with only a few mouths to feed to enjoy the taste of the holidays. But, it’s really warmed my soul hearing people tell me all the ways this series has been helpful. So, I hope you find it helpful too!

 



With small batch holiday cooking, the recipes are designed to feed anywhere from 1-4 people. The recipes can all be easily doubled/tripled/quadrupled or reduced up and down however needed. So even if you’re cooking for an army, these recipes can work for you too!

 



I asked my online followers what they wanted out of a menu this year, and they told me they want traditional flavors but less traditional items. And, I think the menu this year really encompasses that!

 

We’re kicking things off with a crazy simple, 5 ingredient handheld bite that can be served as an appetizer before dinner, a bread element at dinner, or a snack after dinner. You know I love to give you options!

 



We’ll start with a sheet of puff pastry that we’ll thaw according to package directions. We’ll brush the edges with a little egg wash to help seal everything together. Then, we’ll cover the surface with some canned cranberry sauce and a sprinkle of crumbled feta. That’s it. We’re halfway done!

 



Next, we’ll roll the puff pastry, cinnamon roll style, until we have a log. We’ll pinch the dough together to seal the bottom seam shut, then lay the log on a cutting board seam side down. We want to cut the roll into roughly half inch slices, and I find a serrated knife works best for this. The extra teeth on the knife help to give us a smooth cut. Arrange the slices cut side up on a parchment paper lined baking sheet, brush the top and sides of each roll with some more egg wash, and to the oven they go until they’re nice and golden.

 



When these come out of the oven, I like to give them a little sprinkle of fresh rosemary to add another layer of flavor; but you could even get away with skipping that step. Either way, we’re left with a flaky, buttery, handheld bite that’s a little sweet, a little tangy, and a little savory. It’s such a delicious little treat!

 



And bonus, you can serve the leftover cranberry sauce right on your holiday table as another side dish! And double bonus, that leftover cranberry sauce tastes great in a Thanksgiving leftovers sammie too. Don’t worry…we’re still going to make all the components in this series that we need for an epic sandwich!

Cranberry Feta Pinwheels             

Serves: 10-12 pinwheels          Print


Ingredients:

  • 1 sheet puff pastry, thawed according to package directions

  • 1 egg plus 1 tsp water, well beaten

  • ½ cup canned whole berry cranberry sauce

  • ¼ cup crumbles feta

  • 1 tsp minced rosemary, for garnish


Directions:

  1. Preheat oven to 400 degrees. Line a large baking sheet with parchment paper.

  2. Arrange puff pastry on baking sheet, and use egg wash to brush a ¼ inch border on all 4 sides. Spread cranberry sauce all over the surface of the pastry, staying inside the border. Top with crumbled feta spread evenly over the surface. Starting at short end, roll the puff pastry tightly like a cinnamon roll. Use your fingers to pinch the seam shut, then lay seam side down on a cutting board.

  3. Using a serrated knife, cut the log into ½ inch slices. Arrange slices cut side up on the prepared baking sheet. Brush the tops and sides of each slice with egg wash.

  4. Bake for 15-18 mins until the puff pastry is golden brown. Garnish with chopped rosemary. Serve warm. Enjoy!

Recipe notes:

*This recipe can be easily doubled to use a whole box (2 sheets) of puff pastry.

*Make sure you’re using room temperature cranberry sauce so we don’t undercook the inside of the pinwheels.

*If you’re prepping these in advance, you can pop the pinwheels back in the oven at 400 degrees for about 5-10 mins to reheat them through.
