Peeps S’mores- Whether you love’em or hate’em, these seasonal bunny marshmallows make the perfect springtime dessert treat.

I can’t believe Easter is this weekend.
Even though Easter is late this year, I kind of feel like it snuck up on me.
Maybe it’s because the weather in Maryland doesn’t seem to know it’s springtime. Maybe it’s because I’m enjoying this meatless Lent season so much that I’m not ready for it to be over. Maybe it’s because I still haven’t been able to wrap my mind around the concept of time since COVID sent our lives on the wildest ride we didn’t ask for.
But yet, here we are.
The kids are on spring break. The holiday candy is flooding the grocery store shelves. And, I guess I better get with it so that I don’t miss out.
So, I’m thinking today’s recipe is the perfect way to kick some springtime spirit into us all.
Today, we’re making Peeps S’mores!
Now listen, we’re not phoning it in today or anything. But this recipe is SO SIMPLE, it almost didn’t feel right posting it as a recipe. But ultimately, these super simple dessert treats are just too cute and springy not to share.
First, let’s talk about the Peeps. Peeps are essentially animal shaped marshmallows coated in a superfine neon colored sugar. You can typically find them in two different shapes this time of year: chicks and bunnies. And pink, yellow, blue, and purple are the colors you’ll find of these holiday confections. Peeps are manufactured locally to Maryland (in Bethlehem, PA), so they can be kind of a controversial subject around here. There’s really no in between with this Easter themed candy. You either love them or hate them.
At the end of the day, Peeps are just jumbo marshmallows. And, I don’t know many people that buy marshmallows just to chow down on them straight from the bag. So, I can see why they get a bad rap. But that’s exactly why they’re perfect for making s’mores!
Since it’s not quite campfire season yet, we’re going to make our s’more right under the broiler. What’s cool about this method is that you can make as many s’mores as you can fit on your sheet pan. So, this treat is perfect for feeding a crowd. And those marshmallows get just as roasty toasty and ooey gooey as they would over an open flame, so the whole situation is really a win win!
To start, we’ll line a sheet pan with some parchment paper. Then, we’ll arrange our bottom graham crackers in a single layer on the tray. Top the graham with 2 little squares of milk chocolate. Then, top the chocolate with a Peeps bunny in any color. I prefer the bunnies over the chicks for these s’mores because they lay flatter and make a more even dessert sandwich.
From there, we’ll broil the bottom half of the s’mores for about 2 minutes until the marshmallows start to get some browning action. Then, we’ll pull them out of the oven, throw on the top graham cracker to close them up, and dessert is ready to go!
Just like with any traditional s’mores treat, I welcome you to think beyond the milk chocolate here. You could replace the milk chocolate squares with white chocolate to make them a little more springy or with dark chocolate to make the a little more rich. But if you really want to get wild, replace the chocolate squares with peanut butter cups. I promise you…you won’t regret it.

Serves: 8 Print
8 sheets graham crackers, broken in half to squares
1 pack (8) Peeps bunny marshmallows
16 pieces milk chocolate (I used 1 ½ 1.55 oz Hershey candy bars)
Preheat oven to broil, and arrange top rack to 6 inches from the heating element.
Line a baking sheet with parchment paper. Arrange 8 squares of graham crackers in a single layer on the baking sheet. Top each graham cracker with 2 pieces of milk chocolate. Top the chocolate with 1 Peeps bunny.
Broil for 2- 2 ½ mins until the marshmallows start to brown. Top with remaining graham cracker squares, and press together lightly to explode the marshmallow. Enjoy!
*Get different colors of Peeps to have a springy rainbow of s’mores.
*Feel free to get creative with your chocolate choices. You can substitute dark chocolate pieces or peanut butter cups for a fun twist.
*These are best served fresh from the oven.
