Banana Pudding Yogurt Parfait- Lightened up yogurt, fresh fruit, and homemade granola make up this dessert like breakfast.

Today, we’re making a Banana Pudding Yogurt Parfait!

 


When I tell you guys this breakfast recipe tastes like dessert, I’m not even joking. I was absentmindedly eating one of these parfaits just this morning. And I had this moment like “what is that tiny little tang I’m getting? Did I let this sit in the fridge too long?” And then I remembered what I’d sincerely forgotten. I wasn’t eating a dessert cup. I was eating Greek yogurt! That’s how absolutely delicious this recipe is…you truly will not even remember what you’re eating.

 

Lean into the dessert for breakfast vibes.

 


This pretty little parfait comes together soooo easily. So, let’s build it from the bottom up and start with the yogurt. I like to start with a personal sized container of nonfat vanilla Greek yogurt. If you keep a large container on hand, you’ll need about a half cup. Either way, I transfer the yogurt to a mixing bowl so that we can add two more special ingredients.

 


To lighten up the yogurt a little bit, we’re going to add a couple spoonfuls of reduced fat cool whip and just a little bit of vanilla instant pudding mix. We’ll mix everything together until that pudding mix is dissolved. And, the most wonderful thing happens to the yogurt. The yogurt becomes light and fluffy just like a whipped pudding or light mousse. The slight textural difference makes it sooo much more decadent.

 


Then from there, we’ll grab a glass to build our parfait and get started on the layering. First, we’ll go in with half of the yogurt mixture. Next, we’ll layer on some fresh sliced banana. Then finally, we’ll sprinkle in some of the homemade graham cracker granola that I just showed you how to make. Repeat those layers, and that’s breakfast.

 


Just to recap quickly…the homemade granola comes together simply with some rolled oats, crushed graham crackers, butter, and honey. It does a great job of giving vanilla cookie vibes. And, it’s really so easy to make. But if you have some other vanilla or cookie flavored granola that you love, feel free to use that instead.

 


To me, this parfait tastes exactly like the banana pudding I know and love but with the tiniest undertone of tang. The Greek yogurt is practically unrecognizable. The granola is the perfect crunchy texture. And, those sliced bananas just freshen everything up. It’s ridiculously good, and pretty good for you!

 

Ok, everyone…now I feel like I need to turn all of our favorite desserts into breakfast parfaits. What should we do next?

Banana Pudding Yogurt Parfait

Serves: 1          Print


Ingredients:

  • 1 container (5.3 oz) nonfat vanilla greek yogurt (about ½ cup)

  • 2 tbsp reduced fat Cool Whip

  • ½ tbsp vanilla instant pudding mix

  • ½ banana, sliced

  • ¼ cup graham cracker granola


Directions:

  1. To a mixing bowl, add yogurt, cool whip, and pudding mix. Stir well until completely combined and mixture becomes light and fluffy.

  2. In an 8-12 oz glass, layer in half the yogurt mixture, half the banana slices, and half the granola. Repeat a second later with remaining ingredients. Serve immediately, and enjoy!


Recipe notes:

*If you’d prefer to use a store bought granola, use a vanilla or cookie flavored granola. The homemade granola is so easy though! See the post right before this one for the recipe!

*This parfait is best served fresh. If meal prepping, the yogurt and granola can be made in advance, but wait to assemble until ready to serve.
