Today, we’re making Candy Cane Dipped Sugar Wafers!

It’s Day 5 in our 12 days of treats series, and today’s 3 ingredient treat is so simple, anyone can do it!

 

This one starts with store bought sugar wafers. If you’re not familiar with these, think about the inside of a nutty buddy bar. That’s basically what these are. They’re thin wafers sandwiched with a light crème until there’s 3 or 4 layers stacked on top of each other. You can find these in the cookie section of the grocery store, and you can actually get these in a lot of different flavors. I thought vanilla went perfectly with the Christmasy vibes, but I’m not going to stop you if you get another flavor that speaks to you!

Next, we’re going to melt some white chocolate chips in a microwave safe bowl. We’ve talked a lot about tempering chocolate during this series, but you don’t have to worry about that step on this one. And, that’s because we’re mixing crushed candy canes into our white chocolate. But, you still want to be delicate when melting white chocolate. It seizes very easily, so still stick to 15-30 second intervals of heat with some good, strong stirring in between.

Now when it comes to crushing the candy canes, I like them to be pretty finely crumbled for this one. I just put the candy canes in a zip top baggie, seal it, and bang out all my winter frustrations with a saucepan/meat mallet/hammer…something along those lines. I don’t like to see too many big pieces of candy cane on these treats. But if you do, feel free to leave them a little chunkier.

Once the candy cane crumbs are mixed into the white chocolate, the mixture becomes pretty thick and sticky. We’re going to coat our sugar wafers about half way in this mixture, but the cookies are actually pretty delicate. A traditional dipping station doesn’t really work well here, so I like to take a small offset spatula and spread the chocolate mix all over one half of the sugar wafer. That’s the best way to keep everything intact. We’ll let them dry on a wax paper lined baking sheet, and that’s all there is to it!

This one is for your loved ones with the sweetest sweet tooth. These are sweet from the vanilla, sweet from the white chocolate, and minty sweet from the candy canes. It’s the perfect little bite to put you in the Christmas spirit!

Candy Cane Dipped Sugar Wafers

Serves: 20          Print


Ingredients:

  • 20 vanilla sugar wafers

  • 1 cup white chocolate chips

  • ¼ cup finely crushed candy canes (about 4 full sized candy canes)


Directions:

  1. Line a baking sheet with wax paper. Set aside.

  2. Add chocolate to a microwave safe bowl. Microwave in 15-30 seconds intervals, stirring well in between each interval, until completely melted. Add crushed candy canes, and mix well to combine.

  3. Use an offset spatula to spread chocolate mixture all over the top half of each sugar wafer. Place on prepared baking sheet until set, about 30 mins- 1 hr. Store in an airtight container, and enjoy!

Recipe notes: 

*If the chocolate mixture starts to get too thick to spread, pop it back in the microwave for 10 seconds, as needed, and give it a good stir. That should loosen it back up. 

*You can find sugar wafers in the same aisle as the cookies.
