Better than Bouillon Gravy- No drippings required to make a delicious gravy thanks to a simple grocery store ingredient.

Today, we’re making Better than Bouillon Gravy!

I think if I had to pick one item that’s changed my cooking for one/small batch cooking journey, it’d be Better than Bouillon paste. It’s just such a great hack for making chicken stock with the snap of a finger without having to worry about anything going to waste.

When it comes to store bought chicken stock, we pretty much have two options: a can that has a not quite 2 cup measurement or a box that has 4 cups. Those are great for big projects like soup, but what do you do when you only need a half cup? Toss it? Freeze it and forget it? That’s where the DIY Better than Bouillon paste comes in.

Since we’re jazzing up a store bought chicken as our main event this holiday, we don’t have any drippings to use for gravy. But, we can very easily make a super simple gravy with a handful of ingredients and only about 5 mins time.

So to start, we’re going to make our own DIY chicken stock using hot water and roasted chicken BTB paste. It’s as simple as stirring the paste into the water until it dissolves, and that’s it!

Next, we’re going to melt some butter in a small saucepan, then whisk in some flour to make a quick roux. We’ll let that cook for a minute or two to cook off the raw flour flavor, then whisk in our DIY broth.

The bouillon paste is already nice and savory, but we’re going to season our gravy with a smidge of poultry seasoning, seasoning salt, and black pepper. It’s only 3 spices, but each serve an important purpose. The poultry seasoning has a variety of ground herbs, so it’s a great way to add a pop of freshness and brightness to the gravy. Seasoned salt is basically like a house spice that has garlic, onion, and paprika mixed in, so it’s a bang for your buck ingredient. I do not recommend swapping the seasoned salt for regular salt…you’ll sacrifice great flavor if you do. Then, of course, the black pepper breaks up all the savoriness with a little kick of sharpness and heat that blends in beautifully.

Once the gravy is seasoned, it only needs to simmer for a minute or two to thicken. Then, it’s time to serve! This gravy is light and creamy but oh so flavorful. It pairs so nicely with everything on our holiday plate. And, it’s just too easy. It’s practically fool proof!

OK, everyone! That’s it for the main dinner plate. Next, we’ll move on to a creamy, dreamy dessert to finish off our 2025 holiday menu.

I hope you guys enjoy! And, let’s eat!

Better than Bouillon Gravy

Serves: 4          Print

Ingredients:

  • 1 cup hot water

  • 1 tsp Roasted Chicken Better than Bouillon Paste

  • 2 tbsp unsalted butter

  • 2 tbsp flour

  • ¼ tsp poultry seasoning

  • 1/8 tsp seasoned salt

  • 1/8 tsp pepper

Directions:

  1. Add Better than Bouillon paste to hot water, and stir vigorously until dissolved. Set aside.

  2. Melt butter in a small saucepan over medium high heat. Whisk in flour until completely combined, and cook for 1-2 mins.

  3. Whisk DIY broth into the saucepan until completely incorporated. Add poultry seasoning, seasoned salt, and pepper. Continue whisking until the mix comes to a simmer. Simmer untouched for 1-2 mins until thickened. Remove from heat, and enjoy!

Recipe notes:

*Better than Bouillon paste has become my favorite way to make a quick broth. I typically halve the amount of paste called for on the packaging when I make broth, but we need the flavor of a full serving for this recipe.

*Note that seasoned salt is not the same as regular salt! There are added spices like onion, garlic, and paprika. It’s a great way to get extra flavor without extra ingredients. So, make sure you grab the right salt!
