Brownie Brittle- These chocolatey treats have all the flavors of a fudge brownie with the texture of a thin, crispy cookie.

Today, we’re making Brownie Brittle!

It’s Day 4 in our 12 days of treats series, and we’re taking a break from tempering chocolate to make another perfectly satisfying chocolatey treat.

 

This one starts with a good ol’ boxed brownie mix. But, it’s important that you get a chewy fudge brownie mix. The details of this recipe specifically account for the texture of a chewy fudge mix, so if you get another variety, the texture will not be correct. I like to use the Aldi brownie mix, because it’s actually my favorite of all the boxed mixes out there (regardless of what I’m using the mix for).

So, we’ll add the brownie mix to a bowl along with some melted butter, a little water, and 1 egg white. Once it’s all mixed, the mixture will be thick, but that’s what we’re looking for.

We’re going to spread the brownie mix edge to edge on a parchment lined 13x18 baking sheet. The size of the baking sheet is also important to this recipe to make sure we’re spreading the mixture to the correct thickness. We want it to be spread out evenly so that it’s nice and thin. I like to top the brittle with some mini M&Ms for a pop of color, but you could also top with some crushed nuts or even crushed candy canes. If you decide to top with something different, just make sure it’s small enough/light enough so that it doesn’t sink into the batter.

Then, to the oven our mixture goes for about 25 mins. When we pull the brittle out of the oven, we need to make sure to turn the oven off. The brittle will be going back in there to dry, so it’s important that the oven is off. But before it goes back to the oven, we’re going to use a pizza cutter to score the brittle in the places we’re going to want to break it. You can make whatever shape you can cut, but I typically go for a classic square/rectangle. We’re not going to cut all the way through, just making marks for later.

Once our brittle is scored, it goes back into the turned off oven for 1 hour. This gives the brittle time to cool down and dry out to a nice, crispy texture. After the brittle finishes time out, we can easily break it right at the seams we scored, and that’s all there is too it!

 

The beauty of this brittle is that it still tastes like your favorite fudgy brownie but it has the texture of a thin, crispy cookie. It’s the best of both worlds! There is still the tiniest, slightest bit of chew to these which almost makes them feel like candy. They’re just so fun and delish!

Brownie Brittle

Serves: 30 pieces          Print


Ingredients:

  • 1 box (~18 oz) chewy fudge brownie mix (I like Aldi brand)

  • 6 tbsp unsalted butter, melted

  • 1/3 cup water

  • 1 large egg white

  • ½ cup mini M&Ms


Directions:

  1. Preheat oven to 325 degrees. Line a 13 x 18 baking sheet with parchment paper.

  2. To a mixing bowl, add brownie mix, butter, water, and egg white. Mix well until completely combined. Transfer mix to prepared baking sheet. Use an offset spatula to evenly spread the mixture edge to edge. Sprinkle with M&Ms evenly over the surface.

  3. Bake for 25-28 mins until completely set. Turn off the oven. Use a pizza cutter to score the brownie where you’ll want to break it once dried.

  4. Return the pan to the off oven, and allow to cool in the oven for 1 hour. Remove from the oven, and break into pieces. Cool completely before storing in an airtight container. Enjoy!

Recipe notes: 

*It’s important for this particular recipe to use a chewy brownie mix and a 13x18 pan. The cook time was calculated for these particular components. The texture will not be correct if you stray from these directions.

*You don’t have to top the brownies with M&Ms. You can leave them plain, use nuts, toffee bits, other candy, whatever you like! Just make sure whatever you add is crushed to small bits and not too heavy for these thin brownies.
