DIY Thin Mints- This homemade version of a popular cookie uses only 2 ingredients but they’re just as satisfying!

Today, we’re making DIY Thin Mints!

It’s Day 3 in our 12 Days of Treats series, and today we’re taking the knowledge we learned about tempering chocolate in the last recipe and applying it to a super simple 2 ingredient treat!

 

This recipe could not be any easier. We need some mint flavored Oreo Thins and some milk chocolate. That’s it! It’s important that you get the thin Oreos so we have the right texture and right mint to cookie ratio.

So, we’re going to start by melting our milk chocolate chips to somewhere between 89-90 degrees. This is the perfect temperature for milk chocolate to guarantee a smooth, shiny finish. Once the chocolate is melted, we’re going to dip the Oreos in the chocolate until they’re completely coated, tap the dipping vessel on the edge of the bowl to shake off any excess chocolate, and allow the cookies to set on a wax paper lined baking sheet to dry.

 

That’s it! That’s the recipe! I told you it was easy!

Now, this is the holidays after all. So, I highly recommend adding some décor to these cookies to give them a little festive cheer. I like to melt green candy melts, transfer them to a piping bag with a piece cut off to make a small tip, then pipe little abstract Christmas trees on the cookies. But, there are a million different ways to decorate these. If you feel like you don’t have any artistic abilities, just top them with sprinkles or edible glitter. If you feel like you can turn each cookie into a work of art, go for it. If you want to leave these plain, I’m not stopping you. It’s your treat box. Decorate the treats how you like!

These simple little treats are a pretty solid dupe for the original girl scout cookies. The mint flavor is subtle, but present. The cookie is crispy and rich. And the milk chocolate coating is sweet and smooth. They’re so perfectly satisfying.

 

And I promise you, these are SO EASY. Anyone can do it!

DIY Thin Mints

Serves: 25          Print


Ingredients:

  • 1 bag (12 oz) milk chocolate chips

  • 25 Mint Oreo Thins

  • Green candy melts and sprinkles, for decorating


Directions:

  1. Place chocolate chips in a glass bowl. Use a microwave to melt and temper chocolate. Start by microwaving for 30 seconds, stir, then microwave in 10-15 second intervals as needed, stirring well between each interval, until the chocolate is melted and the temperature reaches between 89-90 degrees. If the chocolate is warmer than 90 degrees, add a few extra chocolate chips, stir well, and check the temperature again. Repeat as necessary until the chocolate reaches the correct temperature.

  2. Line a baking sheet with wax paper. One at a time, drop cookies into the melted chocolate. Use a fork to flip and remove the cookie from the chocolate once completely coated. Gently tap the fork on the edge of the chocolate bowl to help any excess chocolate drip off. Place cookie on prepared baking sheet to set.

  3. If desired, melt half a bag of green candy melts according to package directions. Transfer to a piping bag, and draw squiggly triangles on the cookies to make a Christmas tree. Top with a star sprinkle and some nonpareils for lights.

  4. Transfer to the freezer for 15 mins to set. Allow to come back to room temperature before storing in an airtight container. Enjoy!

Recipe notes: 

*Melting the chocolate to the proper temperature is important for the texture of the candy. If the chocolate is too hot, you won’t get that smooth snap when biting into the chocolate. It will almost feel waxy.

*When tempering the chocolate, stir vigorously between each interval in the microwave, and start checking the temps far before you think you should. The chips might not look like they’re melting, but a hard and constant stir will have them melt right before your eyes. It’s an arm workout, but it’s necessary to keep your temp from getting too hot (which happens so quickly). If the chocolate is too warm, add in fresh chocolate chips and stir stir stir til that temp comes down.

*I use an infrared thermometer gun to check the temp on the chocolate. 

*These are the star sprinkles I use.
